called upon to save m eat, it helps
to have dishes with m eat-like tex ­
tu re and flavor so appetites are sa t­

served with some
cheese, are excel­
lent just for such
a purpose.
Tom atoes with a bit of bacon are
satisfying for hearty appetites; so
are squash and lim a beans, with a
bit of sausage. Au gratin com bina­
tions are interesting, too, from the
point of view of satisfying appetites
as well as the budget.
Use the recipes given today when
you want to save on m eat; these
dishes a re not m eant to be used as
a vegetable side-dish for the av er­
age fam ily as they are just a bit too
m uch on the hearty side for such a
purpose.
