In the third quarter of the fiscal year ending March 31, the postal service earned a surplus of $1,363, 00, the revenues for the quarter amounting to $58,934,000, and the expenditures to $57,561,00. The latter showed an increase of 10 per cent over those of the same quarter last year, while the former showed an increase of less than four per ceut. The summer girl who goes to the mountains or Intends to cultivate the walking habit anywhere will need a cowboy skirt, which Is mere ly a plain skirt of yellowish serge, crash or linen with a wide belt trim med with brass. The skirt is worn with a white waist and a large white Panama hat with black chip facing and plain flat bow. To Whip Cream. When cream does not whip read ily, add the white of an egg and beat briskly. Or add a pinch of salt before beating. Peanut Cookies. Two tablespoons butter, one fourth cup sugar, one egg, one-half cup flour, one teaspoon baking pow der, one-fourth teaspoon salt, two tablespoons milk, one-half cup fine ly chopped peanuts, one-half tea spoon lemon extract or lemon Juice. Cream the butter and sugar, add the egg which has been well beaten. Sift, the flour and add to it the salt and baking powder, then stir In the milk, then add the peanuts and the lemon juice. Drop from a teaspoon on an unbuffered sheet of paper about one Inch apart. Rake In a moderate oven 1" minutes. This recipe will make 24 cookies. Potato Salad with Onions. Cut several slices of tendes bacon Into tiny bits and fry until a very light brown. Take out the bits of bacon and saute in the fat a small onion, cut fine. Add half as much of cayenne pepper and half as much of cayenne pepper and half a smuch boiling water or meat broth as vine gar. Have ready potatops boiled, unpared, until tender In salted water. Remove the skins and slice the hot potatoes into the frying pan, enough only to take up the. liquid, sprinkle with bits of cooked bacon, toss together and Berve. Apple Pudding. Place a layer of bread crumbs In to a buttered baking dish, then a layer of apples chopped fine and add layers until the dish is well filled; sprinkle sugar on the top and add a dash of nutmeg, several pieces of butter and pour over all a cup ot boiling water.
