If you do, say specialists of the United States Department or Agriculture, you are throwing away fat which French housewives ( (insider the finest of Tut for milking cakes and especially puff paste, ami which many HOOBo keepers prize for Its many good u I in OOOkary. In certain seasons In New York and other big cities this fat Is ho highly esteemed that It )rlllK aH ,,. as 11.10 per pound So grcut Is the demand for this fat that many people make a business of collecting it from butchers and others who dress poultry before de llveriug It lo customers. Housewives would do well to liislls on having It (,.pjVered If they buy their poultry dressed. By using chicken fat In cooking they can cut down the amount of fat they must buy for that purpose. To prepare it, try it out In a double boiler or other vessel set In hot water until the fat Just units away from the tissues and can be poured off. This fat becomes ran cid easily and should be kept cool and i-overed like butter, and used In a very few days. Chicken fat, like goose fal, may ho used In shorten iug cake, where the seasoning used will mask any flavor which the fnt might have. AICOI Sii.ll. Whether or not Hie A met iciiu peo pie are fully aroused on all matters pretalnllig to Hie war, (Hero can bo no question as lo their being wide awake to the Importance of increas ed food production. As the figures en this season's crops become avail able, the results assume staggering proportions. Such crops the world never has before seen. The one Item of Irish potatoes show the amazing yield of 460 billion bushels. Corn Is away up alongside of the tubers, and In all lines,, aaeept, possibly, wheat the figures, nave swelled far beyond anything ever before known In this country of enormous yields. The result should he a source of great encouragement to our people In many ways, ft will tend to give us some Idea of the Immensity of the domain we ure culled upon to fight for In order in preserve It Integrity. It must also convince that there can be no reasonable fear of hunger In such u land, unless we lose either the Inclination or the ability to tickle our soil '.() the yielding. The result Is also gratifying In that there Is now u question of our being able to extend to our allien all need ed supnJtes of food. Last spring this matter loomed darkly aa one of the dire pOHslbllltles. That It no longer exists will tend to remove at least one of the sources of discontent. Once assured that we shall not want for plenty our people will view with willingness the exportation of sup plies across the waters. The result of the year's labors should teach one more lesson. We should remember that no task Is so great but that with the proper per severence and grit It may be accom plished. Also that there are very few achlevemnetH but may be Improved upon If we can In a single season so largely swell the national produc tion, we should In the next few years, with an arousing of well-known American pluck uud ingenuity, be able to discount even th.it record. In fad-It should leach us thul we huve DOl yet even lmugincd a limit to what we could accomplish. So, whatever mutters we may huve to give us disquiet, we tna be thank ful thul we shall not hunger that there Is enough and to spare. o LOANS AND SAVINGS. When the history or the American war loans Is finally written Into it will be written the account of a peo ple converted from the extravagance to frugality, from reckless spending to prudent saving. It will contain the account of a nation thai while giving freely of its wealth yet In the very ad of giving, received more than it gave. Yes, great as will be the money w outlay necessary for the successful prosecution of this war, the solid enduring benefit to the people of this country will he indefinitely greater. In the firHt place, it has caused us to reach out for an equally huge supply. But unlike the flush periods of former years when the added re Hources have been produced, they have not been wasted in needless extravagance. . o Aneul the scarcity of coal, It is re culled that the old settlers ret used to burn the stuff because it was too dirty. How times do change. Ever stop to think how miser able you would be if all your fears were to bo seallted? A Jolly old edi tor kept this gem at the head of his paper: "I have suffered many misfor tunes, most of which never happen ed." Quit worrying and go to WOBK. o With potatoes rotting in the ground hecuue It would not pay the farmers to dig them, uud the people In the city unable to buy because of the high price, there would seem to be something besides potatoes "rot ten in Denmark."
