The prizes will bo award ed on points rathet than that of dill-like beauty, and tho best children will then bo taken to the sttte fair and entered in a stato- wido contest. HOW TO MAKE JELLY. How to avoid tho "candying" and make jelly "jell", is told in an article written by Miss Marga ret McCall of Albany, a graduate of tho Oregon Agricultural Col logo department of domestic science, in the last muri'- of "The Oregon Countryman", published by the students. "The most common disappoint ments in jelly making aro fail ure of the jelly to harden, and the candying of tho jelly," says Miss McCall. "Jelly is mado by combining sugar and fruit juice nnd heating to the boiling point for a short time. Tho ability of the fruit to form jelly is owing to a substance called pectin, present in all fruit when ripo or nearly so. Pectin is similar to starch, and it is the nction of the pectin nnd the acid in the fruit which causes it to gelatinize. "Fruit for jelly should be sel ected carefully, being not over ripe, so that the pectin is nt its best. It should he freshly pick ed and free as possible from de fects. Any defective part should be removed. An acid fruit is usually preferable for jelly. Some acid fruits, however, are deficient in pectin, nnd thus dif ficult to make into jelly. This trouble may be overcome by add ing fruit juice containing a largo amount of pectin. The flavor will be modified, but in many cases the result is a very good jelly. "Some of the most desirable fruits for jelly making nro cur rants, blackberries, raspberries, loganberries, grapes, quinces, poaches, apples and crabapples. Juicy fruits, such as currants, and berries.should not be gather ed after a rain on account of moisture they have absorbed. They should, for the same rea son, be washed as quickly as pos sible. "They may bo put in the pre serving kettle after washing, crushed slightly with n wooden spoon and heated slowly, while they arc stirred at frequent in tervals. When the fruit is hot it should be crushed thoroughly with a wooden vegetable masher: It should then be strained through a double thickness of cheesecloth placed over a wire strainer, which is over a lagro bowl. It should drain as long as the juice will drip, and pressure should not be used. The clear juice may be used at once, or may be strained through a flannel bag before use. "When the juice has been measured into a clean preserving kettle, a pint of granulated sugar should bo added for every pint of juice and stirred until dissolved. When it has been put on the fire and brought to a boil, it should be drawn back and skimmed. This should bo repeated twice before pouring the liquid in hot, sterilized jelly glasses. Tho healing of tho fruit julco nnd sugar to tho boiling point serves three purposes; to sterilize tho material completely; to concentrate it to tho proper consistency; and tolnwrt, by tho combined nction of temperature nnd free acids, a largo quantity of cano sugar, preventing the jolly troingranuiaung.f "Precautions to bo observed in jelly making nre: Do not use iron or tin utensils; tho fruit acids attack these metals and give a bad color to the finished product, nnd affect the taste; tho kettle should bo porcelain lined or enameled, or of aluminum. Do not cook tho fruit juico nnd sugar too long or tho pectin will lose its gelatinizing power. Do not add too great a portion of sugar or tho jelly will crystallize. Hard boiling may also cause crystallization. "Jellies should bo covered ns soon as they have set to prevent tho growth of molds nnd bacteria and to movent evaporation. Thoy may bo covered by a quarter-inch coat of sterilized parallm. When removed from the glass tho jelly should be firm but not tough.
