carbohydrates, protcim and fat.
Tho averaRO man of 155 pounds
needs only about four and one
half pounds of food a dav, and
this quantity includes tho 70 per
cent of water, according to Dr.
Henderson, who points out that
tho essential food values needed
to sustain a man for a day may
be purchasod in tho open market
for 10 cents.
An interesting explanation of
the plnco theso simple elements
hold in tho diet of man, Dr. Hen
derson points out, is that the
human being is mado up of just
these things. Sinco the food re
pairs tho waste of tho body, he
says, tho process is merely thnt
of replacing liko with like, and,
as ho points out in the matter of
proteins, supplied mainly by
meats, the nearer tho meat is to
human protein the better it is
for the person who eats it. In
speaking of tins, Dr, Henderson
says:
"We cat what we are made of
and this is what we must know
if wo are to understand tho sub
ject clearly. Ex-ceptas proteins
are more liko us, such as beof
for example, one sort of fat, car
bohydrate or sprotein is as good
as another.
"All proteins arc not of equal
value, however, and the closer
tho protein is to man the better.
Thus the muscles of an ox is
nearor the protein we want than
is the protein in the seed of
wheat
"It might be described rough
ly as similar to the question,
which might arise as to tho bet
ter place to repair a locomotive.
As between sending the locomo
tive for repairs to a machine
shop or to a place where farming
tools are manufactured, the choice
would naturally be given to the
machine shop. It would be there
that one would expect to find tho
parts necessary for repairs for
the locomotive. In the same
way, when man seeks food to
furnish protein for the repair
of waste in his body, he will look
for it in material similar to that
of the body."
