Katherine Fuller, a spokes- woman for Colorado’s Arapa- hoe Basin ski area, said the sea- son was “definitely a hard one for all of us.” “But people wanted to ski and ride, and it felt kind of at times like one of the few things you could do because it was all outside,” she said. “We just kind of just sort of rolled with it, and it worked out. It was far better than we expected. I think people really enjoyed themselves.” The ski area near the Con- tinental Divide restricted the number of skiers and snow- boarders allowed on the mountain each day based on terrain, the number of lifts running and public health or- ders at the time. It closed out its winter season Sunday. The average U.S. ski area was open for 112 days this past season, up from 99 days in the shortened 2019-20 season, according to the association. Most ski areas remained open as long as they had initially planned. Meanwhile, small and me- dium-sized ski areas, which are defined by lift capacity, performed well because more guests chose to stay close to home for ski trips. Capacity restrictions, remote work op- portunities and school flexi- bility also meant more skiers and riders hit the slopes on weekdays, easing some of the congestion typical of weekends and holidays. “People had to change their habits during the pandemic, and ski areas were no differ- ent,” Pawlak said. “We tried new things and quickly learned that not only did they function as planned, but many of these ‘work-arounds’ improved the experience for our guests and staff members.” The National Ski Areas As- sociation is a trade group for ski area owners and operators and represents more than 300 alpine resorts that account for more than 90% of skier and snowboarder visits nationwide. The organization has been tracking ski area visitation since 1978. Goddik, the department head, said industry groups donated for a few reasons: to invest in the next generation of the dairy industry, to sup- port research and to have a facility they could access for testing and product develop- ment. Goddik said small cream- eries often lack the equip- ment needed for product testing, while large creamer- ies usually have equipment that’s too big for batch tests — so the scale of OSU’s new facility will be ideal to serve both groups. OSU’s existing facility is only set up for artisanal chee- semaking — a brand called Beaver Classic. In the new facility, students will be able to produce more cheese va- rieties, yogurt, ice cream and other products. Frojen, the creamery man- ager, said she looks forward to making blue cheese with her students, which isn’t pos- sible in the current facility. “We’ll be able to expand into other products,” said Sams, the dean. “(The plant) will also allow us to teach more technologically ad- vanced and industry-relevant things to the students to keep pace with the industry so they’re ready to step into jobs when they graduate.” Sams predicted 100 to 150 students annually, mostly in the Department of Food Sci- ence and Technology, will work directly in the plant.
