W hen oranges, g rap efru it, kum quats
and lem ons a re plentiful in th e m ar­
ket. we .like to
use them in o th er
ways, even if we
enjoy them best
as fresh fru it.
Florida Oranga
Sticks. — Cream
one-quarter of a
cupful of b u tte r;
add th ree-q u arters o f a cupful of su­
g ar and beat until smooth. T hen add
tw o egg yolks, one-q u arter of a cupful
o f orange Juice and th e g rated rin d of
one-half an orange.
Mix and sift
th ree-q u arters of a cupful o f flour,
one-q u arter of a cupful of corn starch
and tw o teaspoonfuls of baking pow­
der. Add to tbe first m ixture, and
when well blended fold in the well-
beaten w hites of tw o eggs. (Jrease
a shallow pan. sprinkle ¿vlth powdered
su g ar and one cupful of finely-
chopped w alnut m eats. Pour in the
cake b a tte r and b ak e in a m oderate
oven 25 m inutes. Rem ove from the
pan. cut in h a lf crossw ise and put to­
g eth er w ith orange filling; cover with
orange icing and cut in n arro w strips
fo r serving.
Oranga Filling.—C ream to gether one
tablespoonful of b u tte r and th ree ta­
blespoonfuls of pow dered sugar. Mix
tw o tablespoonfuls of flour, one-third
of a cupful of su gar, one egg yolk
u n til sm ooth. Add o n e-quarter of a
cupful of orange Juice, one teaspoon­
ful of lemon juice, one teaspoonful of
g rated orange peel, one teaspoonful
of lemon Juice.
Cook over hot w a­
ter, stirrin g Constantly until th e mix­
tu re thickens. Add the b a tte r mix­
tu re and cool before spreading.
Oranga Icing. —Mix tb e g rated find
of one orange w ith one teaspoonful of
lemon Juice, one tablespoonful of or­
ange Julae and one egg yolk. B eat In
eonfectioner’s su gar until th e m ixture
IS stiff enough to spread. T his will
ta k e about one and o n e -h a lf, cupfuls
o f sugar.
