What has been known as “apple oil" or “apple essence," usually amyl valerate, has been snown by F. B. Power and V. K. Chestnut, of the United States bureau of chemistry, to have no existence In the apple. The true odorous principle is described chemically as a mixture of the amyl esters of formic, acetic and caproic acids, together with a small amount of the caprylic ester, and a consider able proportion of acetaldehyde. There may tie also traces of methyl and ethyl alcohols. At ordinary tern- peratures. the essential oil of apples is a yellowish, somewhat viscid-liquid, which darkens on keeping and when slightly cooled hardens Into a con crete mass from the separation of small needle-like crystals of a paraf fin hydrocarbon. The paring« of the Ben Davis apple yielded 0.0035 i»er cent of oil. those of the more odorous crab apple ga«e 0.0043 per cent—rep resenting only 0.0007 and 0.0013 per *-ent of the entire fruit.
