The proper m ethod o f h eatin g cream Is to se t th e can in a vessel of w arm w ater a t a te m p e ra tu re of a b o u t 120 degrees. S tir th e cream con stan tly , w atching the therm o m eter, and when It Is w ithin one o r tw o degrees of th e required heat lift it from th e w ater. T he necessity for th e c o n stan t use of a reliable th erm o m eter m ust be em phasized. T he Huger as a th e r m om eter Is not th e least bit of good. 1 m ight say here, In bu y in g a th e r m om eter have several placed in a glass of w ater a t about GO degrees an d ta k e one w hich gives a m edium reading Suppose they read GI degrees, 59 de grees. 57 degrees. W hen necessary add Just suflicient b u tte r color of a reliable b ran d to give th e b u tte r a clear yellow tin t. From tw o to fo u r drops per pound o f b u tte r is sufficient. It is not necessary to s tir th e coloring in. J u s t rinse off th e spoon in th e cream and p u t on th e lid. T he revolutions of th e ch u rn depend on th e am o u n t and richness o f the cream . T h e poorer th e cream an d th e less of it th e g re a te r th e speed. C hurn Just us fa s t a s you can so long a s the cream drops. A fter th e b u tte r breaks keep up th e speed and w atch th e sight glass to see how th e b u tte r is g a th e r ing. If th e g ath erin g process is com ing-on quickly add a couple of q u a rts of w ater several degrees low er th a n the cream . W e often have th e w ater very cold If th e c h u rn in g has been too quick. T h is w aler re ta rd s th e g a th e r ing. lessens the likelihood of over- ehurning aud gives a m ore e x h au stiv e churning. W h en W a te r M a y Be Added. W hen no tiny specks of b u tte r an d only a few large ones a re seen on it th e c h u rn in g Is usually finished. O ther sig n s are th e b u tte r stan d in g out well on top of the b u tterm ilk with foam bubbles over It and w hen no particles o f b u tte r come w ith th e first d raw n butterm ilk . T hese a re noticed if the butterm ilk Is allow ed to run through th e stra in e r d ip p er placed over the pall for catch in g th e b utterm ilk. Any b u tte r w hich may escape w ith the lost d raw n b u tterm ilk is c a u g h t in the dipper and retu rn ed to th e churn. Make a d rain through th e b u tte r to the bung hole and rinse th e b u tte r w ith a little o f th e w ash w ater. T his m akes th e w ashing more effective, as It carries off a g reat deal o f th e b u t term ilk. An ex h au stiv e c h u rn in g should not leave over 2 per cent f a t In th e b u t term ilk. T h ere a re m any good reasons for b a rin g th e b u tte r In g ra n u la r form ra th e r th a n tn large lum ps w hen finish ed churning. The more b u tte r is w ashed th e more It Is robbed o f Us flavor. Good b u tte r should be w ashed a t once. If th e b u tte r has an objectionable flavor or h as com e so ft o r is to be packed for w in ter use It should then get tw o w ashings. Should the only w a te r av ailable not be cold a cup o r tw o of sa lt add ed to ti slightly low ers th e te m p e ra tu re and helps to d ra w th e b u tterm ilk from th e b u tter. Salt a Matter of Taats. Salt In b u tte r is a personal ta ste , and tb e a m o u n t to use should be d e te r mined by tb e consum er ra th e r th an by tb e producer. Use n othing b u t th e best d airy sa lt. Buy It In q u a n titie s and keep it In a clean, d ry place. If th e b u tte r Is for Im m ediate use a u d la salted on th e w orker th re e -q u arters o f uu ounce per pound of b u tte r is usually su fficien t If you sa lt It In th e ch u rn use an ounce, us not so much is Incor porated into th e b u tter. F or th e high class tra d e th is w ould be too heavy salting. T h is tra d e calls fo r th re e things—light color, delicate flavor, little s a l t 1 stro n g ly recom m end sa ltin g In th e churn.
