vealed. Manila lias some fine clubs, and its
places of enjoyment, while probably not

of our occupation many of the escaped
lepers were foiu.d engaged in begging,
but when the search for these began
they hid nway, mid tho other beggars
were given a better chance. Among tho
beggars aro many nttractivo children,
and the passer can't help admiring the
coal black eyes nnd listening to the puro
accents of theso children. Tlieir inno
cent pleadings will make ono give them
something, for it is hard to resist such
appeals. Besides theso beggars who
station themselves along tho streets,
there nro others who go among the
crowds and solicit nlms. It is a common
sight to see a blind man or woman Do
ing led through tho streets by a child

so many mendicants who ply tlieir lowly
calling with such consnminnto craft.
I linve seen ennm:li incidents of this
peculiar feature of street lifo in Manila
to fill a volume. Tho other duy I saw

was down in the Jninpo district, mere

sunk down on the sidewalk aud leaned
his weary back against tho wall, ho
eating a bit of cold meat and a crust of
bread (riven him by a soldier. Ho was
not alone, nor was he accompanied by
a child, ns many beggars are. Disomy

knees in sign of expectation. Nothing
conld shako his faith, as ho knew that
his master would not forget mm, ana
he did not. The poor mendicant divided
his scanty lunch with his dumb com
panion. Another sceno which I shall never
forget was one witnessed in tho out
skirts of the city only a few days ago.
As I was passing along a street I saw a
poor, miserable woman sitting on a
stono with an infant in her arms. A I
passed she arose and intercepted mo,
holding out her hand for money. When
I hesitated a moment, her pleadings
were incessant, and. although I under
stood not a word of the Tagale language,
the npis.nl was most eloquent, but not
to be compared with her thanks when
the solicited coin was given.

lishment is done in tho early part of
the night, aud, entering the building at
II p. m., amid tho intense confusion one

ing loudly ami gesticulating wildly, tho
cattle bellowing, tho horses whinnying
and the pigs snuealing produce a very
bedlam. Occasionally the roar of a bull
rising nbovo the din and mingling with
the chorus of weaker sounds adds to the
already deafening noise. As tho niiimai9
nro tied to tho rings already mentioned,
this din gradually subsides, nnd tho na
tives cease their outlandish shouts for a
time. The boast stand meekly awaiting
tlieir fate. Everything is made ready,
knives aro sharpened, bnckets prepared,
ropes secured, and all the men nest a
minute until the gong sounds. Instant
ly tho scene, which but a moment ago
was peaceful, is changed to tho wildest
disorder. Cows, butlaloes and ponies
drop on all sides. Tho men, armed with
small axes or short spears, knock tho
animals on the head or stab them at tho
baso of the brain.
The blood of horses, cattlo nnd water
buffaloes is all collected in ono vessel,
nnd this mixture is made into a kind
of jelly. It is aumsiiig tosee tho natives
skin tho animals. They make a hnn
gliug jobof it. With the liido tho onter
layer of meat is taken off. nnd nfter
ward nativo boys strip this from tho
hide. Next coined tho work of disem
boweling, and after tho entrails nro re
moved they are taken to another room
and there prepared for food by nntlvo
women. Every part of tho animal is
used. Even tho hoofs are taken to vats
and the gelatin extracted. After the
carcass is tpiarterod and hung upon tho
hooks it is taken of! tho bones and then
sent to the native market houses. Abont
200 animals au slaughtered nightly.
To Americans horse meat is something
new, but to the. Spanish and natives,
who endured the siege when rats sold
for a pes.), this meat is a luxury. Most
of tho ponies slaughtered aro old und
nnfit for any service. They bring only
abont 10 pesos at tho matadero. It is
amusing
