In our kitchen we make a
waffle that Is delicious if well
made, and yet is economical.
Here la the recipe:
2 cups flour.
2 eggs.
1 tablespoon melted butter.
I - 4 teaspoon salt.
1 3-4 cups m ilk.
4 teaspoons baking powder.
Sift the flonr on^p before
measuring.
Sift together flour,
baking powder and salt.
Add
milk to the slightly beaten eggs.
M ix well and add to dry In­
gredients. Add melted shorten­
ing. ' Bake Jn well-greased hot
waffle iron.
You w ill notice that the eggs
are hot beaten separately fn |hls
recipe. The old method was to
beat separately and fold In the
white» last.
We have learned
by experiment that thia is un­
necessary and only takes more
time
and
leaves
you
mere
dishes to wash.
I sometimes
vary this method Just a little
and add the m ilk to the d ry -in ­
gredients ad then Add the beat­
en eggs, Instead o f , combining'
them. I f yon prefer to use sour
m ilk, which w ill always make a
tender product w ith
a
good
brown color, you might try this
recipe w ith the same directions
for mixing as the sweet m ilk
waffles.

littla water upon it, and if it
spits and splitters, the iron is hot
