J . I n . THE ART OP DINING. Chauncey Depew, In a recent extract published some days ago In the Astorfan, Is reported as saying that the greatest ' achievement of clvillxation is he educa- tion of man ln the art of dining. Dr. j Depew has been credited with raying so ; many foolish things of late that it is a, question whether he has lost his head or that his many newspaper 'rlevls have: turned against him. One can hardly j imagine how a man who has directed the ! affairs of one of the greatest railroad cor- , porations in the world with signal ability j should place above the groundwork of his life the comparatively cvery-day effort of ! eating his dii, ner. Of course Mr. Depew Includes in the art of dining the mingled ' flow of conversation and wine which ac-' company the performance of the accom-: plished diner. A dinner without good ' fellowship la simply something to eat. It ', is nature's way of restoring the lavages! of time. On Mr. Depew's rafi.vays the ' feat could be accomplished after a fash-! Ion in twenty minutes, but the art of i dining requires considerably more time. J There is one point of view from which ; the remark attributed to Dr. Oepew be-! comes significant. The art of dining In-j eludes after-dinner speeches. How many ! men have been wrecked In ufter-dlnner ' speeches no one knows. A good after-! .7 . , dinner speech Is a happy combination of wit, wiwloni and judgment. The wit of I h speech will not excuse the slightest In- I discretion The after-dinner platform Is w,... U1 ie -Mieuaer. iir. uepew nas pronaiiiy made more after-dinner speeches than any other man in America, and as he Mill lives he may assume that the art of dining is man'b greatest achievement. But he is getting a trifle- stale, and so are his "witty" sayings. The public have suf fered long, but thfte Is a limit lo every thing. Among the complications of modern : business methods there is no factor of as I great Importance or which ro permeates I every line of business as railroad trans- ; portutlon.
