WHAT TO EAT.

To Produce Muscle.
"What is the best food for pro
ducing muscle?" This question of
our correspondent is a legitimate
one. Some foods are particularly
muscle-formers; others produce
fat, and still others brain and
nerve, while most of the common
articles of diet combine these uses
in varying degrees.
But the question, to cover our
enttre physical needs, requires to
be. bro-idened to this: Wha: com
bination of food will best nourish
the the body? Even then the an
swer must be modified to suit the
individual cases; for the digestive
power differs greatly in different
persons. Moreover, theft; is an
interdependence betv.ecii the
different bodily oravuis and
tissues, so that the body must be
built up as a whole. If one part
lacks, the whole suffers, and if one
part is overfed the others will be
underfed.
Thus a person who becomes un
duly fat loses in muscular fibre,
eitlibr 111 quantity or quality. One
who overfeeds the brain loses in
muscular strength. So, too, mus
cular development may be carried
to such excess as to impoverish the
brain, and also reduce the fat of
the body below what is necessary,
both as surplus food laid up for
emergencies, and as a protection
against sudden changes of temper
ature. The best food for producing
muscle, therefore, must, while be
ing duly appetizing, contain
large per cent (1) of nitrates for
the muscles, (2) of phosphates for
the brain and nerves, and (3) of
carbonates lor the tat.
Of the first class, the nitrates,
beans stands at the head at 24 per
cent.; then pease at 22; cabbage
and salmon at 20; oats at 17; eggs
ana veal at lb, ana beef at lo.
Of ihe second class the phos
phates, salmon stands first at 7;
then codfish at G; beef and eggs
at o; beans and veal at 4, and
cabbage, peas and oats at 3.
Of the third class, the airbon
ates, butter stands at the head at
100; rice at SO; corn and rye at
72; wheat at C9; oats at 60; pease
at GO; beans at 57, and cabbage at
40:
Fresh codfish fried in fat or
served with butter gravy about
equals beef in all respects, and so
do eggs fried in fat. Beef with
cabbage makes a very nutritious
diet. But we must add:
1. The mere eating of food can
not make muscle. The muscles
must be called into vigorous daily
exercise, yet without overdoing.
2. Excessive eating is weaken
ing, and must be avoided. It is
the amount digested and assimi
lated that tells, not the quantity
taken into the stomach.
3. All tho laws of health must
be steadily observed. loitth's
