New York.

The possibility of the support of
a man with a wife and two children
upon $7.50 per week has met with
much questioning since the state
ment was made that the problem
had been solved, but an interest
ing experiment in New York has
demonstrated the utmost achieve
ment of economy within the pre
scribed Jimit. For a family of
four the rent was $1 per week,
fuel 50cents and lighting 12 cents.
The food expenses were com
pressed to $2.48 per week by
the most careful management.
A bill of fare contained two stews
for four square meals, each made
of 10 cents' worth of meat and
bones, a handful of rice and flour
worth 1 cent and a little salt and
pepper. Each stew, eaten with
bread, served for the next meal in
a warmed-over condition. Four
more of the principal meals were
provided from fried salt pork at a
cost of 14 cents; boiled beans fur
nished two meals for Hi cents; a
pat roast of beef, three pounds for
36 cents, and 5 cents' worth of
potatoes made a royal Sunday din
ner. Bread and molasses fur
nished the luncheon in the middle
of the day at a cost of 35 cents,
making the total expense of food
for the week 2.48. Comfortable
clothing was provided at 2.50 per
week, and it is said that even
with the addition of a few luxu
ries of food the family were
able to deposit S78 in a savings
bank during the year. Whether
the story adequately tulfills the
conditions for a wholesale living
may be, perhaps, questioned, since
nothing is provided to meet the
"wear and tear" in every house
hold but it is usetul as an illus
tration of economy. Scientists
have decided- that- thc-averago-workingmen
requires daily in his
food not lets than four ounces of
proteids, two ounces of fat and
eighteen ounces of carbohydrates.
Bread, oatmeal, milk, sugar, po
tatoes, beans and lard at a cost of
12 cents will supply all the food
absolutely required by one person
for living. At the increased ex
pense of 19.33 cents more elabor
ate .diet can be made with 2(5
ounces bread, 2 ouuees codfish, 2
ounces lard, 1C ounces polatoe-, 1
pint milk, 1 ounce sugar and 3
cups of tea. As food is the most
expensive factor of living, it is
capable of the most intelligent se
lection, and depends more upon
individual taste and judgement
than any other condition ot life,
since rent and clothes are fixed
more by extraneous circumstances
and less yielding to choice. The
intelligent workingman gains by
a careful study of a hill of fare.
It is useful for him to know that
among vegetable foods in com
mon use oatmeal, beans and pota
toes are the cheapest; that one of
the greatest needs of the working
man is a suffcient supply of an in
expensive, wholesome fat, and
that cheap meals may be as nu
tritious as costly cuts. The pre
vention of waste by judicious
cooking is an important matter
for the consideration of the work
ingman in which he can be helped
by his wife's carefulness. It
would be difficult to estimate the
amount of waste in American
kitchens caused by ignorance of
the true value of food, but it is
known to be unnecessarily large.

BOB BELL'S ANE0D0TE,
A Brilliant Burst of Eloquence Avail
able for Political Orators.
Many public speakers have at
tempted to tell the following anec
dote, but have lost themselves in
the sublime touches imparted to it
by Judge Bell, whose version of
the story has won for it the dis
tinctive appellation of "Bob Bell's
Anecdote." No other man can tell
it like Bob, and no newspaper re
porter has ever made a passable
report of the story always falling
short on the cmbelishments.
A political campaign is at hand,
and we have prevailed upon Judge
Beil to pnt the anecdoie in writing,
that a verbatim report might be
printed, so that hereafter campaign
orators may not spoil a matchless
story when lhev attempt to tell
"Bob Bell's Anecdote:"
To the western pioneers a cow's
tail suspended from an augur hole
in the door of the ccabin used for
dressing hides wathe sign of a
tannery. During those times a
cultivated and highly imaginative
English tourist was travelling on
horseback through- Kentucky.
Riding along a public road, he
came abreast of a tanyard, and his
eyes dilated and were transfixed
as thoy caught sight of the primi
tive sign. To our hero it was a
miraculous sight. Reining up his
horse, and gazing in growing won
der, he commenced soliloquizing,
and soon broke forth in a brilliant
monelogue: "I have traveled far
and wide; I have been at earth's
loneliest bound on ocean's wild
est shore; I have seen the great
sun that hides its face in light, come
up from his" watery couch in the
Atlantic and bathe his mighty
axle in the Pacifie; I have seen the
great ocean when its placid bosom
like a polished mirror reflected the
unbroken azure of the heavens,
and I have seen it when the storm
god was abroa?, and those tran
quil waters were lifted and
dashed in spray -mountain high; I
have seen the rainbow that glo
rious wonder woven by sunbeams
and the mysteries of refraction
span like a n augel's diadem the
brow of the dying storm; I have
seen the morning mist rise with
wing of wavy gold to greet the as
cending sun, and gather in grim
and angry thunder-clouds around
his setting, and all these things I
could understand, for they were
all explainable by the fixed and
eternal laws of nature, of astrono
my, and of natural philosophy; bnt
how in the names of all the gods
at once that cow could jump
through that door, and leave her
tail fast in that hole, is more than
T can understand.
