Referring to the cheese fac tories on Clatsop plains, a corre spondent of the Northwestern Farmer and Dairyman, says: There are three of these fac tories owned by Joslah "West, C. Butterfield and C. "Ward, one to each respectively. The method of making and handling the cheese is much the same at these differ ent factories, and is somewhat as follews: The night's milk is strained into the cheese vat, where it remains over night, when it is well stirred to mix in the cream that has formed, and to this is ad ded the morning's milk, and by means of heating attachments and apparatus connected with the cheese vats, the water in the box, or vat holding the cheese vat prop--er, is heated, and this in turn transmits a portion of its heat through the metallic bottom and sides of the inner vat, and when the temperature of the milk has been raised to 85 Fahr., the liquid rennet is put in, using from a pint to a quart to every eighty gallons of milk. After the curd is nearly done shrinking and the whey is drawn off, the curd is salted, mixing in thoroughly two to two and one-half pounds of the best dairy salt to every S00 pounds of milk used. During the salting operation the warm water under and surround ing the inner vat is drawn off, and when the weather is warm, cold water is allowed to flow in to re place it and assist in cooling the the curd, which should be stirred and raked about until well cooled to prevent too great coagulation, and all freer escape of the whey. "When sufficiently cooled the cheese is put to press and the key turned, until the right pressure is obtained. After eight or ten hours the cheese is taken out and "turned," as it is called, usually not amounting to more than plac ing and readjusting the cheese cloth. After 'Murning" the cbeeses are left in the press until it is wanted the next day ior the fresh suppty, when they are taken out and placed on shelves in the curing room, and for the first two or three weeks turned over almost daily; after that not so often, rub bing with the hand the side that was down, and every few days us ing a clean cloth moistened with a little fresh butter or lard. The curing room is well ventilated, kept free from flies, and supplied with a stove to regulate the tem perature in cool weather. The nearness of the Clatsop country to the ocean where these factories are located usually ensures during the summer season a naturally suita ble temperature in the store rooms for excellent curing of the cheese. A date or some other distinguish ing mark is placed ou each cheese when put on the shelf, to more easily and correctly determine its age and ripeness. After sev eral weeks curinir it is sent to market, Portland and Astoria be ing the principal purchasers. The rennets used at these factories, at least one factory, came principally from Syracuse, N. Y. A small part of the supply, however, comes from the calves at hand when killed for veal. The preparation o rennets for the home market and for export, ought to become something of a paying industry in Oregon and Washington, but as a source of profit to the dairyman, is left practically undeveloped. Commissioner Sparks of the land office has prepared a statement of disposals of public lands and re ceipts therefrom during the fiscal year ended June 30, 1885. Total number of entries, 226,3S2; total number acres, 20,112,GG3; total value, $7,G8G.114 80. The num ber of original homestead entries was 50,877, including 7,415,885 acresj the number of final home stead entries was 22,060, including 3,032,079 acres; the number of original timber culture entries was 30,998, including 4,755,005 acres; the number of final timber culture entries was 750 including 90,300 acres; the total number of acres taken under railroad selections 3,558,914, made up as follows (fractions omitted): Alabama 33, 198, Arizona 133,052, California 376,445, Colorado 111,252, Dakota 790,693, Iowa 6,014, Kansas 195, 046, Louisiana 19,887, Minnesota 108,217, Montana 793,459, Ne braska 178,039, Nevada 60,012, Oregon 245.386, Utah 17,123, "Washington territory 535,216, "Wisconsin 51,819. The grand total of the disposal of land (20,113,663 acres), includes 881, 850 acres of Indian lands. This is a decrease in the number of acres disposed of as compared with the year 1884 of 6,535,656, but as compared with the year 1883 it is an increase of 683,630 acres. From sales of Indian lands $933,483 was realized, making the total receipts from all sales of lands $7,686,114, a decrease as compared with the receipts during 1884 of $4,159,552, and as com pared with the year 1883 a de crease of $3,085,167. t The governor, the secretary of state and the state treasurer were by act of the legislative as sembly created a board to com pute and levy the amount of state tax necessary to pay the expenses of the state government for the en suing two years. Considerable in quiry, says the Oregonian, has arisen as to what the levy will be. Owing, however, to the conditions imposed the board will be unable to determine the amount until they have received from all the coun ties abstracts of their respective assessment rolls for 1885, and thus enable them to ascertain just the amount of taxable property in the state. Upon their receipt the board will act without unnecessary delay. As yet but one assessment roll has been received, that being from Columbia county. Appear ances indicate a falling off in the amounts as returned by the coun ties and compared by those of 1884. The president is said to have determined to remove E. J. Dawne, appointed some two or three months since as United States judge for Alaska. This is the appointment out of which grew the caustic letter of the pres ident to one of the indorsers of Mr. Dawne, who after recommend ing him found fault with the ap pointment. The president has received several letters from this state, representing strongly that he is unfit for the place, and is said to be indignant at the manner in which he was imposed upon by those who asked for. the appoint ment. Yesterday's Oregonxan pays Mr. Anthony Noltner the fine com pliment of saying that, "he could do what many could not he could carry on a paper, after a fashion, almost without money," Mr. N. has had many unsuccessful im itators in Astoria during the last twenty-one months.
