Short-horns. One of the first of the nuro breed of cattle bronpht to America were the Short-horns, and they have ever greatly exceeded iu number all the established pure breeds of cattle iu this couutry, and hold now a position which seems se cure against all possible contingen cies. It is claimed for them that thev mature earlier and altaiu great er Tveiguc iu a givta lime luau win any other bred. Ked, white and roan .are the prevailing colors of the Short-horns. In form and other characteristics there is greater varia tion among them than among most other established breeds, as is but natural, since tLeir number is so much greater than that of tho others. "While tho Short-horn has become noted throughout the world as a beef-producing race, they are fre quently good milkers, and some of tho cows have butter records of which the dairy breeds would have no reason to be ashamed. The bulls of no other race have been so exten sively used in crossing upon other cattle as have the Short-horns, and it is more than probablo that they will continue formany generations to lead all others in number, in this country as well as in others. One reason of their greater popularity is that the supply is so great that the prices, excent for a very few popular families, are not generally beyond the reach of the average prosperous farmer. Tho latter, therefore, turns naturally to Short-hornB when ho begins the improving of his herd. Uhanuel Island Cattle. About GO miles due south from tho English coast of Dorsetshire, lies tho island of Alderney, which is seven miles west from the province of Manche, in north-western France. The island ot Jersey is some ninety-five miles from Dorsetshire, and nearly fifteen miles from Manche. Twenty mile3 south west from Alderney, and the same distance northwest from Jersey lies the island of Guernsey. From these three islands come tho famous butter producing breeds of cattle which bear respectively the names of Alderney, Jersey, and Guernsey. Theso races resemble each other so closely that only experts can distinguish one from another. All aro in fine bone and horn, sleek of hair usually fawn iu color, with a little white, aud with black horns, hoofs, tongues, nose and switches. 2fot many years a fancy led many breeders of Jerseys to try aud rid their cattle of all colors other than fawn or black; but the butter making capacity ha3 of lato years been considered of more importanca than color. The cows of all these r.tces are very gentle, but this cannot be truly said of the bulls. JJot a few of the Jersey bulls aro very vicious. Jersey cattle have for centuries been bred tibsolulely pure. No bovine an imal capable of breeding has been permitted to land on the island of Jersey, for many generations. One result of this wise management is that the cattle breed true so their chief characteristic: and have the power to impress their character to a marked degree upon their offspring, when crossed with other cattle. An other result is that the Jerseys are never known t suffer from epidemics in their native home. Only a limited number of Guernseys, aud a still smaller number of Alderneys have been brcught to America: but Jerseys are to be found in almost every part of the land. The chief value of these breeds lies in their ability to produce milk of exceeding richuess, from which largo quantities ot butter of excellent quality are made. They trausmit this ability to their offspring so certainly, that it is safe to sav that the milk value of tho butter making cattle of this country might be in creased fully one-half in the next generation by the use of the bulls of Channel Island breeds. The quantity of the yield of bultor would be increased greatly, but tho greater improvement would be found iu the the better quality, and consequently higher price of tho yield. Jersey butter made by people having an es tablished reputation for neatness and integrity sells rapidly for prices ranging from forty cents to SI per pound throughout the year, when butler from ordinary cows sells at 15 to 30 cents. In 18S2 a list coaiaiaiug the names of 67 Jersey cows, which had produced between 11 and 15 pounds of unsalted butler in 7 days; 22 that had made more than 15 and ess than 1G pounds; 25 gave between 1G and 17 pounds; 1G had a record of 17 and less than 18 pounds. Holstein-Friesian. Holstein-Frie-sian cattle have risen very rapidly of late years in tho estimation of the public. In some measure this is da to the efforts of breeders and other admirers of tho race to make known the merits of their favorites; but still more largely to the fact that the per formances of some of these cattle, as milk and butter producers have con vinced the general public of their great superiority as dairy stock. Some of the records of yields of milk have seemed, to those not well acquainted ivith the race, to be litt'e less than marvellous. Previous to the beginning of tho year 1SS3, the greatest yield of milk in a single year was that of the Holstein cow "Echo." It was 18,120 pounds. As butter makers, these cows stand on par with the best in the world. Many cows of this race have made over20 pounds per "week; several over 80 pounds, and live more than 90 pounds of butter in thirty days. "While they are justly considered as unequaled as milk and butter producers, they are not by any means unworthy of high esteem as producers of beef. In color the Hol-stein-Friesians aro pied, or black and white. Thev are lnrfra of frnrno. -wif h a great development of tho hind quarters, giving plenty of room for the milk-secreting organs and recep tacles. They are reasonably hardy, but require a fair supply of food and attention to help them keep up their remarkable production of milk and butter. It is not claimed for them that they can thrive and pay their owners if half starved or whollv mar keted. KIT CARSON'S RUSE. During the last war tho great Navajo tribe of Indians were on the warpath. Tho First Begiment New Mexico Volunteers, commanded bv the great scout and Indian fighter, Colonel Kit Carson, was ordered to subdue and bring them into subjection. Major Joe Cummings, who had organized one of the first companies of the regiment, aud as brave a man as ever lived, was one day riding at tho head of the command with old Kit, when tho following incident took place: Kit was dressed in his old suit of pepper-and-salt, while tho Major was in full regimentals, even to epaulettes. While Kit hated dress and tinsel, the other lived to dress. They were now nearing a canyon, and Kit's well trained eyes were the first to discover the smoko of tho redskins ascend ing from the neighboring mountains, telegraphing the approach of the soldiers. It was then that the big hearted old trapper and patriot turned to his friend and said: "Joe. you had better change your coat and hat, and put on a blouse and slouch hat, for we will soon have hot work, and the varmints will surely aim for the com mander, and as you have on your r gimentals they may tako you of me; at any rate you make a splendid target" The Major answered: "Col onel, it is no time now to go to the rear." They were the last words ever uttered by the brave Commings. Bang! went a rifle, and as tho smoke curled up beside a rock tho brave Major fell mortally wounded, pierced between the eyes by the unerring aim of a hidden foe, amid the wild yells of the savages, hidden from view, who imagined they had killed tho greatest fcont that ever lived. TheJlost Woader'al Fluid. The blood. It is- our life. It must bo iu good order to go through the very delicate little tnbe3 throngh which it is constantly coursing. .Of it self the fluid is without color; but, as we look at it, is a deep red; the cor puscles give it that color, by reason ot the iron in them. The corpuscles are so small that it takes 3,100 of them laid iu a straight line to make an inch. This famous tonic is only a dollar a bottle, at the druggists. A P.:g Hotel Expense. During the season of one hundred days last year, ono Saratoga hotel paid a market bill of S125.000. Among the items were 90,000 bounds of beef, 18,000 pounds of mutton, 20, 000 pounds or lamb, 7,000 pounds of voal, 1,500 of pork, 60,000 pounds of chicken, 35,000 pounds of game, 900 dozen squabs, 20,000 pounds of fish. 6,000 pounds of salmou, 22,000 pounds of butter, 2-1,090 dozen eggs, 65,000 quarts of milk and 10,000 quarts of cream. Of Saratoga hotel guests i t has long been said that eating occu pies the lion's share of their atten tion.
