It is not uncommon says the Coast 2Iail. to see butter in rolls of good quality and tolerably fresli with a coating of salt crystals all over the outside, giving it a salty aud unpleas ant appearance. This may be caused in several ways. It the salt used is of poor quality," and particularly if it 13 too coarse in grain, it fails to be well incorporated in iho butter, and, changing to brine after the rolls havo been made up, it comes to the surface and lakes the form of a crust. The finest and best salt, not well worked into the butter, will act in the same way. Again, if there is more moisture left in the bntter than it will natur ally hold, the salt joins with this ex tra water lo form brine; this brine finds its way lo the outside, evapor ates and leaves Ihe salt covering. The best means, therefore, of avoidiml this difficulty, is lo mako the butter by the granular method, wash it very thoroughly and allow it lo drain and dry off well, while still in tho gran ular form, before adding the salt, Then mis in the salt as thoroughly as possible, having it of the best quality and as fine as can be got; allow it tostand a little whilo before working and putting into its final form. This gives an opportunity for .ill the salt to dissolve before the working and then for removing all surplus brine. All butter, howover, contains a pretty large percentage of moisture in the form of brine, and it must be kept in a moist atmosphere or else the water of the brine will evaporate more or less, leaving tho salt visible on the oulside. Any good butter will show this dry salt if exposed long enough in very dry Ilarvey "Ward, a carpenter, sold half his laud near Gleucoe, "Washing ton counly, about two months ago, to a womaud in Portland, and received $500 in cash therefor, and ha3 not been in tho county since, and it is feared that he has been foully dealt with. The lady to whom he sold half the property came out to take posses sion soon after tho purchase, but, finding tho houso locked, did not move in, and has been waiting for him lo return and give possession. He had some pigs and a few chickens and other stock on the premises that be did not sell, and it is natural to sup pose that ho intended to return home. Caterers have had great difficulty in packing fine fish like salmon and shad to be sent long distances. The packing has been sawdust and ice. The sawdust not infrequently imparts a woody flavor to tho lish that spoils it for dclicato taste. Thomas Gay, the head wailer at the Fifth avenue, tells mo of a new way of packing which is coming inlo vogue.
