There is a great deal said and 'writ
ten abont washing or rinsing butter
when in the granular state, but "we
hazard nothing in saying thero aro
hosts o people who have made but
ter all their lives in a small way, and
yet have never seen butter in a gran
ular state. The way in which milk
is kept on the farm, it will produce
a greasy substance when churned
and nothing else. The man who runs
a dairy for the money there is in it,
is anxious to learn all thero is to .be
learned, his "bread and buttor" de
pend on it, but the farmers who keep
cows partly for tho tho purpose of
raising calves and partly for the but
ter used on their own tables, pay too
little attention to tho manner of "mak
ing butter and the cost of the article.
There are farmers' wives who, under
adverse circumstances, make excel
lent butler, but the general verdict of
grocery men is, that creamery butter,
even seven mouths old, is belter and
sells better than the best country
roll, however freh. Herein is one
of the secrets ot the want of success
among farmers. 1 00 little attention
is paid to minor matters. This is not
attributing to them a lack of intelli
gence, but an oversight of a very im
porlanl matter. A suitable place to
keep tho milk and ripen up the cream
need not be expensive, nor will a good
churn with thermometer cost much.
A butter worker is of course indis
pensable. These will pay for them
selves in a short time on any farm
where half a dozen cows are kept and
their product handled.
It has been decided by an Arkan

superior to n district school as n civ
ilizing agent.
