COLUMBIA SALMON IN NEW YORK.
A bilii has recently been intro
duced into the New York legislature
making it necessary for manufactur
ers of canned goods to place on the
label of each can the date of pack
ing. The intent of the law is well
meant, hut its adoption is unneces
sary and would work a hardship on
the canners of the Columbia river
without securing a single advantage
to the consumer or any one else. The
bill is presumably based on the as
sumption that canned goods deterio
rate with age, and that each succes
sive season lowers the value in a sani
tary point of view of the canned
salmon, meat or fruit The supposi
tion is not borne out by facts. Salmon
that is well put up will remain sweet
and wholesome just as long as the air
is kept excluded. There is on a shelf
within reach of the writer a row of
cans of salmon put up in 1880, nearly
five years ago. A short time ago one
of the cans was opened and its con
tents found to be firm and good, fit
food in every respect for the most
fastidious. It is not saying too much
to assert that where the salmon is put
up under experienced and competent
management, such as is universally
found on this river, that a can put up
in 18S0, and a can up in 1834. when
placed side by side will turn out
equal in flavor, firmness and attract
ive appearance.
The idea in canning salmon as in
other goods is to thoroughly exclude
the air. The nearer this is entirely
done, the surer the salmon is to keep.
If the air is not entirely forced out
from the can of cooked salmon tho
contents will rot and in tho course of
three weeks or a month will become
putresent Tho bare fact that a can
of sajmon keeps one year is of itself
sufficient evidence that it will keep
for two or three or four or as many
years as the tinjasts in which it is on-cased.
Tho canning of salmon on the Co
lumbia river is as perfect as any
process of tho kind in the world
The salmon after canning is subjected
to so many tests beforo being finally
boxed up for shipment that the per
centage of improperly cooked or
sealed cans, is reduced to tho lowest
possible minimum. The few tins that
may escape the packer manifest their
unwolcomo presence long before tho
salmon has been placed in market.
It may bo asserted without fear of
successful contradiction that if a can
of salmon is thoroughly cooked and
perfectly sealed its contents will re
main unaltered as long as the metal
casing remains intact
The intent of the New York legis
lature in this regard is all right
They want to protect their citizens
against unwholesome food but they
are going about it in the wrong way.
If they would work effectively let
them pass a law against the pirates on
the Sacramento and elsewhere who
steal the Columbia river brands and
under cover of a Columbia label try
to work off their inferior pack, which
by reason of circumstances that the
are powerless to control is by nature
and manipulation inferior to the
salmon of our river.
Sometime in the life of the brain
the faot will appear, that throughout
the sorrowful ages of man's worship
ing hitherto, he has always idolized,
to himself made, a God to correspond
with his own dwarfish understanding,
and that as man has grown his God
has grown and that as man shall
grow, his God will grow. Tho ques
tion is not now whether this is not
the benevolent education with which
a benevolent God gradually inspires
tho successive generations of men.
We may well believe that thiB must
bo so, and our acceptance of tho fact
will but increase our reverent desire
to grow into tbo mystery as well as
the beauty of His attributes. But
the fact remains, a thing in our path
through the universe for us to exam
ine and to weigh its weight.
And now it appears almost certain
that the gallant Gordon has met tho
death he so often braved in the shock
of battle. Such as he and Burnaby,
who was killed last week in the Sou
dan, are the objects of what may bo
styled compulsive admiration. One
cannot help admiring the bravery,
the dauntless bearing of those men.
Had they lived four hundred years
ago they would have come down to
us as does. Bichard Plantagenet, or
Godfrey De Buillon. No greater,
braver hearts ever beat in the days
when chivalry won the plaudits of
the little world that grows so as
means of communication open, so
that a rifle shot on tho African desert
echoes instantly across to this wes
tern verge of the Amerioan conti
nent. '
How apparently widely differing
conditions effect each other, is illus
trated by the fact that the cholera in
France occasions a direct tax tin ev
ery newspaper in the United States,
the disinfecting of foreign rags caus
ing an advance in the price of paper
on which the news iH printed. To pa
pers like the New York Horald it
makes a difference of $1,000 a week.
The old moss found more than a
foot thick in various partsof Sweden
proves an excellent material for paper-making.
Bulletin. Moss-backs
could thus bo utilized to great mutu
al advantage in newer countries than
Sweden.
