The rapid and immense advance in hops has astonished both pro ducers and consumers. Choice New York sold ninety days ago at 50 cents per pound to-day the' are worth $1.15 meeting an active consumptive and export demand. In England and Europe prices are correspondingly high. The cur rent high prices are due to defi cient crops the world over, the shortage being estimated, (on the basis of last year's consumption) at no less than 30,000 bales. This is a serious matter for the brewers, who are already turning their at tention to cheap substitutes, such as bitter wood, roots, etc., one of which, quassia chips, has suddenly advanced irom 2i to A. cents per .pound. There is no substitute, however, that has ever been hit upon by beer and ale brewers that contains the same preserving qual ''ity as hops, to say nothing about wholesomeness. In England, which is the headquarters for malt liquors, the kind of ale and porter required for shipment to various parts of the world, and especially to warm climates, must be fermented with hops to keep them. Substitutes even for that required for imme diate use do not give satisfaction. Yet substitutes will no doubt be largely used on both sides of the Atlantic during the next ten or twelve months, and the consumers will soon be obliged to pay a higher price for an article of fer mented beverajjes.
