We have the pleasure of laying before
our readers pictures of three of the moat
famous cows in America. The first is
Pauline Paul, the llolritein cow that
made over 1,100 pounds of butter in a
year. She stands at tho bead of butter
producers by the year teat in America.

Pauline Paul hurt one of her hind feet
four years ago, ami is therefurea cripple.
In spite of -that, however, she is the
greatest butter cow on record. She is
owned by J. B, Dutcher, Pawling, N. Y.
The Queen of tho Jerseys is the fa
mous Bisson's Bello.
This beautiful cow is of the Tennessee
family of Jerseys. Bello belongs to
Major William J. Webster. She yielded
in the year ending July 1-1, 1,028 pounds
15J ounces of butter, the highest record
for any Jersey so far in a year.
We present here what are commonly
believed to be the three tvnes of dairy
cow, the Holstem for milk, the Jersey
IIISSON'8 HELLE. JKltSEY QUKKN,
for butter and the Ayrshire for cheese.
There are exceptions to all records, how
ever, as well as to rules, and in this case
the greatest individual butter producer
is the Holstein, Pauline Paul.
The third illustration shows a fine
typo of a cheese milking Ayrshire family
In Erie county, N. Y., Jlr. N. L. Con
ger has a herd of beautiful pure bred
Ayrshires whose milk ho sends to a
cheese factory near by.
Tho reader will readily trace the dis
tinctive characteristics of these noble
breeds of dairy cows. Mr. Conger is so
well pleased with his Ayrshires that he
would not change them for any other
breed. Each of tho three families is the
best that a dairyman can own in the
localities that are suited to it. In form-

dairyman must consider what family of
cattle is best adapted to Iho soil and
climate in his locality; second, what kind
of a market ho must cater for, that is to
say, whether butter, milk or cheese will
pay best; and third, tho help he will
havo to hire and tho wages to be paid.
Temperature for llees.
Now that tho bees arc iu the cellar
tho matter of temperature is all impor
tant. The Beekeepers' lleviow remarks
that moisture haa a great bearing on
this point. The drier the air tho lower
the temperature may be without injuri
ous results. If tho atmosphere of a cel
lar is too moist, unslaked lituo will ab
sorb the moisture. Tho probabilities
are that there are more cellars too moist
than there are that are too dry for the
welfare of tho bees.

FEED FOR AN IDLE HORSE.

A horse has a small stomach and active
digestion. The food therefore should be
of tho highest nutritive quality, with as
little waste matter as may be. It should
bo as easily digestible as possible. Whole
corn and cob is not such a food, and on
general principles is not to be considered
either healthful or prolitablo. The feed
ing value of a food, as estimated by its
chemical constituents, is not a safe
guide, as the cob, while not without
some seeming nutritious quality, is hard
ly digestible, and in this respect has
about the name value as woody fiber in
the form of sawdust. In the experience
of horsemen, the cob has been suspected
of dangerous qualities and as productive
of indigestion. Certainly it is not in any
way a food that can, under the special
exigencies of the season, be considered
either useful, safe or economical.
But com is an excellent food for a
horse under certain circumstances. It
is a concentrated food, it has a large pro
portion of carbohydrates which supply
the required heat and is suitably defi
cient in tho albuminoids that are not
wanted by an animal that is resting.
Again, its starchy character is Buch that
when, in the form of meal, it is masti
cated it becomes a plastic and solid mass
that is not readily attacked by the gas
tric fluid, and is thus not easily digested
and is likely to produce an attack of
colic, which, while it may not be dan
gerous, yet takes up so much of the re
served force of the animal as to cause a
loss of food. The corn, then, should be
coarsely ground, and if fed with cut hay
will bo still more safe and profitable to
feed.
A horse of 1 ,000 pounds needs, in ad
dition to fifteen pounds of good timo
thy hay, not more than ten pounds of
corn coarsely ground, and this allow
ance of grain may bo considered as equal
to 50 per cent, more of whole grain.
This supplies about twenty pounds of
dry substance containing of digestible
matters fourteen pounds carbohydrates,
a pound and three-quarters of albu
minoids and half a pound of fat, which
is ample for a horse of that woight, and
even for one of 1,200 pounds kept in a
warm stablo without work, but having
sufficient exercise to keep the blood stir
ring and maintain a healthful consump
tion of food.
A stable may be warm and yet well
supplied with fresh air. A sufficient
supply of oxygen is indispensable for the
proper change of the carbohydrates of
the food into heat. In a close, warm,
impure atmosphere loaded wi th carbonic
acid this oxidation cannot go on, and
the animal becomes listless and sleepy
and the food is wasted. Therefore am
ple ventilation must be provided, and a
temperature of not less than 40 degs.

House for Water Fowl.
It is a good plan for all stock to have
some place they can make headquarters,
and it is hotter for the owner to make
tho selection of that locality than to
leave it to the inclination of the animals.
Too many farmers neglect this in pro
viding for stock, particularly for poul
try, and more particularly for water
fowl.
It is true that ducks and geese, like
sheep, are not especially in need of extra
warmth or shelter, as thoy are warmly
clad and resist the cold successfully, but
still some slight structure, enough to
give them the needed little protection,
is advisable, and best of all it gives
them a place of resort where they may
make it home.
You will find, by erecting some such
building as the one here represented,
that the eggs are much more easily col-

lected and the stock counted up. They
will show their appreciation of your at
tention by collecting there often and
making it a center from which to start
in all directions on their foraging expe
ditions. Our artist has given us one kind of ar
rangement. The open space in front
might be constructed with a sliding lat
tice door and the ducks thus kept in
each morning until the eggs are collect
ed. Of course there would not be the
expense of drinking fountains nor dust
baths, roosts nor nest boxes, aud the
precaution we wish to urge is that it be
carefully guarded from dampness aud
mold. The ducks leave the water with
some water on the body, and although
very little, still after awhilo, together
with the dampness rising from the pond
or stream, enough will accumulate to be

A MILLIONAIRE'S POULTRY.

In the first yard were a lot of Hon
dans, a French breed liked by Mr. Van
derbilt, although Mr. Heidtmann does
not think so much of them. They are
very handsome and graceful, have large
black and white spots on their feathers,
aud big topknots, colored similarly. In
the next yard were brown Leghorns,
beyond those white Leghorns and in the
fourth yard Plymouth Kocks. Adjoining
the feedroom i the incubating rooin,
the most interesting of all. This room
contains double and two single incu
bators, having a united capacity of 1.S00
eggs.
The incubators are of the latest pat
tern, those formerly used by Mr. Heidt
mann having been discarded. Every
possible care is used to make the ma
chines successful. Mr. Heidtmann has
added a number of devices of his own to
guard against possible failure. The saf e-
tv valves are delicately poiseu to regu
late the heat in the incubators, which
must not lie uioro than 103 degs. nor less
than 101 degs. The same system of heat
ing by hot water pipes is used in them,
the heat for the boiler coming from ft
large, common lamp. In order to pro
vide against unforeseen occurrences an
alarm bell is attached to the heating

The brooders aro arranged so that the
newly hatched chickens go into the one
occupied by those described. As they
grow older aud stronger they are moved
along until they are big enough to shift
for themselves, when they fall victims
to Mr. Vanderbilt's liking for tender
broilers. The temperature in the first
brooder is kept at about 88 degs., and it
descends gradually in the others. The
heat is supplied by hot water pipes.

ens. In some brooders the heat conies
from below, but Mr. Heidtniann says
that it weakens the chickens' legs and
keeps them small.
"in order to give the flesh flavor and
firmness," he said, "chickens must be
brought up quickly. If they are not
well fed and nourished they will grow
slowly and become tough."
Back of each brooder is an exact copy
of the sun parlor in use at winter resort
hotels. The parlor is small, made of
glass and iron, and the floor is strown
with coarser sand than that iu the
brooders. There are half as many par
lors as brooders. Beyond these are still
larger sun parlors of the same kind,
with ordinary sand and pebbles on the
floor. Still farther back are open yards
seventy-rive feet in depth. On warm
days the strong young chickens are out
either in the sun parlors or the open
yards. Some of the bigger chicks in the
last brooders were running about their
parlors on the day of visitation. There
are cooler brooders in the feedroom,
but they are not in use now. The doors
in the brooders leading to the sun par
lors are controlled by cords. Every pre
caution is observed to avoid frightening
the chickens.
Workmen are busy constructing a
brick cottage, in which Mr. Heidtmaun
will live. On tho other side of this cot
tage dredgers are making a canal for
the white ducks that Mr. Vanderbilt
will raise. The dredgers havo been at
work for three years, for the canal is
long, reaching to the bay. A circular
duck pond has been built. Mr. Vander
bilt prefers the White Pekings, Mr.
Heidtmann said, although he now has
some Rouens.
"We now havo about forty ducks," he
said, "and about 700 chickens. By noxt
season we will have from 1,200 to 1,500
chickens. Mr. Vanderbilt says he never
ate as good broilers as those wo raise
here. Monte Carlo is famous for good
eating, but he says even there the chick
ens don't have flavor like ours." New

true worth, and if they were given en
tire charge of the poultry and had fair
facilities for keeping them they would
make something out of them surely.
Whether you count in comparison, the
labor or the feed or the house, the hens
will draw ahead of any other kind of
farm Btock when it comes to result in
dollars. Say a good cow costs fifty dol
lars and you make a profit on her of
twenty-five dollars a year; that's 50 per
cent, on your investment. Now fifty
dollars will buy 100 large pullets in the
fall, and in one year these pullets can be
easily made to pay a profit over cost of
feed of $lo.
