Ham Loaf
In Candied
Form Good
Spring is just around the cor
ner but that doesn't stop home
makers from putting a few fresh
touches on family and company
meals.
Dull appetites become razor
sharp when whetted by this Can
died Harr. Loaf. Ground meats
present many mealtime varia
tions. An intriguing menu that would
complement this Candied Ham
Loaf might include mashed sweet
potatoes, buttered peas, Waldori
salad, cloverlcaf rolls. For iles-se.-t
you might like to serve a
lemon layer cake with coffee or
milk. ,

Candied Ham Loaf
2 pounds ground ham
1 pound ground beef
2 cups whole wheat bread
crumbs
1 cup milk
2 eggs, slightly beaten
1 teaspoon dry mustard
'.2 teaspoon salt
'.2 cup brown sugar
Vi teaspoon ground cloves
Soak bread crumbs in milk.
Artd eggs. Combine ground ham,
ground beef, nfustard, salt and
bread mixture. Mix well. Mix to
gether brown sugar and cloves
end spread In bottom of 5x9-inch
baf pan. Pack mixture in pan,
'nke in a moderate oven (350 F)
r l'.i hours. Turn upside down
to serve.
Yield: 10 to 12 servings.

For Sour Cream
Nowadays guaranteed fresh.
commercially soured cream is
readily available at the dairy
counter or from the milkman: it
is a favorite garnish or delecta
ble ingredient in many recipes.
Whipped sour cream makes a
tangy garnish for such soups as
pean, bean or beet. Add horse
radish andor other flavoring
ana it becomes an excellent
meat sauce. It is frequently used
as the base for a fine tart cucum
ber sauce for fish. Add sour
cream to the drippings from
braised pork chops, veal chops

sieak for a gravv that really
cn't be beat. Whipned or un
shipped snur cream is well-liked
in salad dressing . . .
It' also makes excellent sauces
for vegetables: try stirring it into
ennked, seasoned green beans:
add hits of chopped pimicnto for
additional eye appeal.
In quick breads, cakes and
cookies it can not only .replace
(he milk called for but may re
nlace nart or all of the fat. In
these baked products, soda is
used to replace all or part of the
baking powder figuring '2 tea
sooon soda to 1 cup of sour
cream.
Sweet Muffins With
Sour Cream Favorites
Wheat germ is vaddcd for taste
and nutrition in these muffins:
Sweet Muffins
1 cup brown sugar
Vt cup shortening
2 eggs
1 cup sifted all-purpose flour
H teaspoon salt.
1 .teaspoon baking powder
1 teaspoon soda
1 cun sour cream, or soured
milk
1 cup wheat germ
Cream the sugar and shortening:
heal' in eggs. Sift flour, salt, bak
ing powder and soda. Add the dry
ingredients to the creamed mix
ture alternately with the sour
cream. Fold in wheat germ. Fill
greased muffin tins. Bake in hot
oven, 400 degrees, 15 to 18 minutes
Recipe makes 12 muffins.
