beating after each. Sift together
flour, baking powder, baking
soda, salt and nutmeg. Add al
ternately with apple juice to
creamed mixture. Add nut
meats. Four into 2 creased 9'
deep layer pans. Bake in mod
erately hot oven, 375 F., 35-40
minutes. Cool 5 minutes. He

Apple Juice Filling
Vi cup sugar
4 tablespoons cornstarch
5s teaspoon salt
1 cup apple juice
2 egg yolks
2 tablespoons butler
1 teaspoon grated lemon rind
1 tablespoon lemon juice
Mix sugar, cornstarch and salt.
Gradually add apple juice, cook
over boiling water, stirring con
itantly, until thickened, Cover.
Cook 10 minutes. Beat cbb volks.

Place the carrot in the cavity

pre-heatcd to 450 degrees. When
it is browned, reduce heat to 330
degrees and continue cooking until I

in all. Baste every 15 minutes with
the soup. When done, mix basting
juice with lemon and serve as
sauce. Serves 4.
Oven-Fried Chicken
1 2'4-pound broiler fryer, cut up
teaspoon fresh-ground pepper
2 tablespoons flour
1 cup chicken bouillon, broth,
or 1 chicken bouillon cube
dissolved in 1 cup hot water
Seasoned salt (garlic, onion
or chive)
Vi teaspoon paprika

seasoned salt. Combine flour,
paprwa, salt and pepper and dust
pieces of chicken. Pour 'i cup of
brolh in a shallow baking pan.
Place chicken, skin side down. !

oven for 30 minutes. Turn chicken
over. Add remaining Vi cup of

chicken is tender less than 30
minutes. Serves 4.
