Here's the recipe which makes use of those odds and ends of left over ham. Clip it and trv the next time you bake a ham. It's a good dish to serve for luncheon or sup per and may be served plain or with a cheese sauce if desired. Quick Cheese and Hnm Souffles l't cups ground, cooked ham v pound sharp Cheddar chese, grated 1 small green pepper, optional 1 small onion 1 cup milk 2 egs, separated 6 slices pineapple Combine ham and cheese with finely chopped green pepper and onion. Stir in milk and beaten egg .voiks. nnip egg wn:tos until stiff and gently fold in. Spoon mixture into 6 well-greased, 6-ounce cus tard cups. Bake in a moderate oven 1350 F.I for 30 minutes or until set. Arrange pineapple slices on serving platter and unmold each souffle on pineapple slice. Serves 6. Stuffed Ham Slices Nice for Variation To vary the ham dish once In a Mule try this recipe for stuffed ham slices. Stuffed Ham Mires U cup chopped onion cup butter or margarine 3 cups soft bread crumbs ?4 teaspoon poultry seasoning . l cup canned whole Kernel corn Vi cup water or liquid from corn 2 ham slices, cut 1 thick Brown onion in butler or mar garine; mix with crumbs, poultry seasoning, corn and liquid. Place in between 2 ham slices, bkewer slices together. If desired, stick whole cloves in fat. Place in cov ered baking dish. Bake in moder ate oven, 350 deg. F., m-2 hours, or until tender. Garnish. Serve with marmalade muffins. Bacon as Sandwich Filling Always Tops Fry some extra bacon at break fast time to use in sandwiches for school or work lunchbnxcs. Crisp fried, well-drained bacon makes a hearty sandwich filling, either in strips or crumbled with a filling mixture. Here arc some sugges tions for using bacon in . sand wiches: 1. Place bacon strips between slices of cracked wheat bread spread with apple butter. . 2. Mix crumbled bacon with chopped egg and salad dressing and spread on rye bread. 3. Place bacon strips between buttered slices of Vienna bread with chili sauce or catsup. 4. Mix crumbled bacon with pea nut butter and mayonnaise and spread on whole wheat bread. 5. Place bacon strips on crack ed wheal bread spread with butter or mayonnaise. Place a leaf of let tuce in a separate wrapper for adding at lunch lime. With Oven Dinner Serve cntp cole slaw, garnished with well-drained canned peach slices, along with an oven dinner ol meat loaf and scalloped potatoes. A Salad Trick Fur u.iUbually tasty lurkey-al- munu sulad, add a can of drained, minced clams to a mixture ot tur key, celery, green pepper, piinien to and roasted almonds, loss lightly with a dressing ol two parts mayonnaise and one part oil and one part wine vinrgar. Pep up Beans Add a tablespoon or twu of table wine to a can of baked beans and heal to bubbling in a moderate oven. Great to serve with grilled ham slices or sausages.
