ORANGE EGG NOG 2 eggs, separated 1 caa frozen concentrated orange juice 1 quart milk 3 tablespooons sugar Grated orange rind Combine egg yolks, orange Cookie Decorations Quick Cheese Spread For Holiday Snacks Just as Tabasco adds Its subtle zest to seafood, tomato Juice, and gravies, so does it perk up on one of our favorite foods, cottage cheese. The ad dition of just a bit of this li quid pepper seasoning takes cottage cheese out of the bland class and makes it a real he man food. This cottage cheese spread is one of the quickest and easiest to prepare for buffets, and it goes well with potato chips, toast rounds or crackers. Mix IB a big bowl, and decorate the J top with cut-out plmiento lor the festive night. Quick Cheese Spread 1 cup (8 ounce package) cottage cheese V teaspoon Tabasco Pimiento Mix together cottage cheese and Tabasco; turn into serving dish. Cut Happy New Year let ters from pimiento; place on top of cheese. Serve as a spread with potato chips or crackers. Yield: 1 cup. Festive Colorings It'is easy to introduce the red and green identified with the holidays in vegetables and salads by simply tossing a handful of diced green pepper and a tablespoon of pimiento slivers into mashed potatoes, in hot potato salad, in maca roni and cheese, in hot cab bage slaw . . . and other blond foods you'll think of. Colored sugar may be sprinkled over cut-out cookies before baking. To make col ored sugar, rub 1 or more drops of coloring into a little granulated sugar. Frosting in various colors may be spread on baked cookies or put on through a decorating tube. To make sugar frosting, add a lit tle milk to confectioners' sugar U to zvs teaspoons of milk for each cup sugar). Add few grains of salt, few drops vanil la ana any coloring desired. Decorate trees and wreaths with "green" coconut. concentrate and one table spoon of sugar, mixing well. Beat egg whites until they will hold a soft peak; beat in the remaining 2 tablespoons of sugar gradually. Fold egg whites into yolk mixture. Di vide evenly in 4 tall glasses. Fill with milk. Sprinkle top with grated orange rind. Serv es 4. SFRITZ 1 cup soft butter cup sugar 3 egg yolks , 1 teaspoon vanilla 2M cups lifted flour Mix butter, sugar, egg yolks, and vanilla together thorough ly. Work in flour with hands. Force dough through cookie press onto ungreased cold bak ing sheet In desired shapes. Bake in moderately hot oven, 400 deg. F., about 8 minutes, or until set but not brown. Makes about 6 dozen cookies. t .
