Canning Onions New in
Salem Industrial Life

Salem ha solved one of the
housewives' crying problems.
No longer mutt she shed tears
peeling for a dish of creamed
' onions, for stew or some other
Concoction demanding a good
ly number of onions.
December 1, the Salem plant
ftarted canning boiler onions
of the Yellow Denver variety.
They come in two sizes of cans,
the 303, which Is the retail alze
for use in the home and the
No. 10 can for hotel, restau
rant and institutions.
A far as is known, the Starr
plant Is the first to can onions
locally. However, firms In other
part of the country have
canned onion and they have
been ea the market
The new operation la timed
to begin after the firm haa
ompleted processing prunes
nd provides employment for
from 28 to 30 persons at a time
when the cannery normally
would not be operating. It is
possible that the canning will
continue for two er three
months.
In addition to providing em
ployment onion canning is also
providing a market for onion
growers for the smaller size of
onion.
Those being canned this year
are coming from Lake Labish
and from Gaston and are re
ceived by the cannery alter be
ing graded out of the larger
onion.
Preparation of the onions
and their canning is relatively
simple. There is an odor, but
after a short time of working
on the onions, it is claimed
they no longer bring tears to
the eye.
Arriving at the cannery in
the usual red mesh bags, with i

ions are dumped into boxes and
placed in front of the women, I

step in the preparation for can

Daniel Schulze of the Willam
ette faculty about Journeys
through European countries in
charge of a group of about 30
young people from various
parts of the United States.
The trip was made last sum
mer, and the collection of
slides Included' natural scen
ery, architecture, folk life and
customs In all the countries
visited.
All were explained or com
mented on by Dr. Schulze. '
