Hominy Grits
Spuds Substitute
The current potato shortage
is no problem in southern
homes. For generations they
have served hominy grits
whether there was a shortage or
not.
Hominy grits are more than
a mere substitute anywhere in
the South, they are an every
day standby. In iact, grits are
commonly known as the "po
tatoes of the South." Northern
visitors are amazed to meet
them at breakfast as a cereal,
at lunch as a vegetable and at
dinner with gravy or butter.
One good reason for this
popularity is the easy prepara.
tion. Grits cook in 25 or 30
minutes.
. Then too, grits can be quite
versatile, as demonstrated by
this delightful grits ring with
Creole shrimp. A real specialty,
it- will meet with quick ap-
proval with your family and
friends.
Ham Pies, Grisp Oatmeal
Cookies for Hobo Picnic
Is there one among us who
has not at some time or other
wished for the simple life of a
hobo! Perhaps we'd tire of the
life quickly but just a little
would be fun, such as a Hobo
Picnic.
Gay .carefree, with food that
will pack for a few city blocks
or a country mile, a hobo picnic
can be the most fun, yet one of
the simpleest to prepare.
Traveling Ham Pies will
satisfy hearty outdoor appetites.
Ham and green beans in a zip
py sauce are tucked into the
flavorful corn meal pastry.
Wrapped in , foil or heavy
paper, they travel well in your
hobo handkerchief. Since they
are so complete, a few crisp
vegetables can round out your
simple menu.
Oatmeal Surprises are also
good travelers and are perfect
for nibbling. Mint wafers are

For a July Fourth lunch or i center of cake and fill with re-
supper buffet choose dishes you
can prepare ahead; then relax
and enjoy the party. Baked ham
(served cold in thin slices), a
vegetable aspic, rolls and butter,
and a berry-and-cream. cake all

tiute delicious. Here are recipes
for 'the" salad and dessert.
Vegetable Aspic " .'
Ingredients: .One 3-oz. pack
age lemon gelatin, 2 cups very
hot pale dry ginger ale, 1 tea-
K spoon sale, 1 tablespoon lemon
jf juice, 1 Vi cups shredded: green
, cabbage, Vi cup sliced radishes,
' Vi cup diced cucumber, Vi cup
it sliced scallions, chicory, cucum
ber slices, -radish roses, sour
' cream, chives.
Method: Stir gelatin into gin
ger ale until dissolved. Stir in
.salt and lemon juice. Chill until
consistency of unbeaten egg
. white. Fold -in cabbage, sliced
radishes, diced cucumber, and
scallions. Spoon into mold. Chill
until set. Unmold and ring with
chicory, cucumber slices, and
radish roses. Serve with sour
-cream mixed with chopped
. -chives. Makes 6 servings.
Flag Cake
V Ingredients: One 17-oz. pack
age white cake mix, Vt cup
.'Shredded coconut (cut), Vi cup
plus cup milk, 1 pint fresh
strawberries (sliced and sweet
ened), 1 cup heavy cream
(whipped and sweetened), 4
whole strawberries with hulls
left on.
- Method: Empty cake mix into
Jowl. Add coconut and mix well.
I Add Vi cup milk. Blend, then
i beat 1 minute. Add cup more

and beat 1 minute longer. Pour

Condensed Soup Is
Aid to All Cooking
Ask any best cook her secret

condensed soup. You're prob
ably an enthusiast yourself.
Cooking with soup is a habit
that's helping many home-
makers make ends meet from
the standpoint , of both minutes
and money.
Soups make such fine cook
ing sauces. Start with one of
them and it's easy to prepare a
casserole or any meat or fish
dish that calls for sauce as an
ingredient or as a topper.
Chicken Slices in Cheese Sauce
- 1 pound asparagus, cooked
, (fresh, frozen or 1 No. 2
can)
6 slices cooked chicken
1 can (l'i cups) condensed
cream of chicken soup
, Vi cup shredded Cheddar
cheese
Place asparagus in bundles in
a flat baking dish or pan; top
each with sliced, chicken.- Stir
soup and. cheese together; pour
over chicken. Place under broil
er, or in hot oven (450 degrees
F.), until lightly browned. Ar
range on platter. Makes 6
servings. .'
Note: For '. variation, use
either cream of mushroom or
celery soup instead of chicken.
Good With Toast
Did you ever taste mashed
avocado on toast? It's partic
ularly delicious to serve with
scrambled eggs. Fixing the
avocado is easy. Mash one of
those summer avocados and
season a bit with salt and a few
sprinkles of lemon juice.

Creole Shrimp in Grits Ring
Grits Ring:
5 cups boiling water .
1 teaspoons sail
IV4 cups enriched hominy grits
Creole Shrimp:
2 tablespoons butter
Vi cup chopped onions
Vt cup chopped green pepper
Vt cup choped celery
Vi cup flour
2 cups tomato juice
1 clove garlic, minced
1 teaspoon salt
1 tablespoon sugar
2 cups cooked shrimp
For grits ring, slowly stir
hominy grits into boiling salted
water; cover and cook for 25
minutes, stirring frequently.
Pour into greased B-inch ring
mold and let stand about 25
minutes. Unmold onto plate and
fill center with Creole Shrimp
(see below).
For Creole shrimp, melt but
ter; add onion, green pepper
and celery and cook until
brown. Stir in ; flour until well
mived. -Add tomato juice and
cook, stirring occasionally un
til thickened. Add garlic, salt
and sugar and cook 5 minutes
longer. Add shrimp and. cook
10 minutes. Serve in center or
grits ring.
Gelatin Desserts
Cool gelatin desserts are ex
tra delicious on wa-m days. Dis
solve a package of - lemon-fla
vored gelatin in a 12-ounce can
of hot apricot whole fruit nec
tar and add Vt cup cold water.
Chill until partially thickened
and fold in 1 cup fresh rasp
berries. At serving time, break
into' small pieces and combine
with soft ice cream. Serve im
mediately,
Ice-cold apple juice liberally
spiked with lemon juice is a
thirst quencher and refresher
without peer.

Vt teaspoon salt
Vi cup brown sugar
Vt cup granulated sugar
Vt cup shortening, soft
1 egg
Mi teaspoons vanilla
lVz cups rolled oats
(quick or old fashioned,
uncooked)
1M cups rolled oats
V cup chopped nutmeats
Filling:
20 chocolate mint wafers
Sift together flour, soda and
salt into a bowl. Add sugars,
shortening, egg and vanilla.
Beat until smooth, about 2 min
utes. Fold in rolled oats and
nutmeats. Shape dough into
rolls. Wrap in waxed paper and
chill thoroughly.
Slice Vi inch thick and place
on ungreased baking sheet.
Bake in a moderate oven (350
degrees F.) 10 to 12 minutes.
Remove from oven and immedi
ately make "sandwich cookies"
by placing a mint wafer be

(Makes 12 Ham Pies),
Pastry: .
3 cups sifted enriched flour
1 cup enriched corn meal
3 teaspoons baking powder
2 teaspoons salt
Vi cup shortening
1M cups milk
Filling:
Vi cup butter or margarine
1 cup flour
1 cups milk '
1V2 teaspoons prepared mus
tard lMr cups cooked string beans,
cut
2 cups diced cooked ham
Sift together flour, corn meal,
baking powder and salt. Cut in
shortening -until mixture re
sembles coarse crumbs. 'Add
milk, mixing lightly only un
til '.mixtufe is dampened. Roll
out on lightly floured board to
-inch thickness. Cut dough
into- 24 -round circles about 4
inches4n- diameter and place 12
oh two cookie1 sheets.
Place small amount of the
filling (see below), on each of
the .'12 pastry circles. Top with
the other pastry circles and seal
edges- together with :fork,. or
fluting. Prick each little pie
with fork,-and bake in hot oven
(400 degrees'F.) 15 to 20 min
utes., '.
To make -filling, melt butter
add flour and mix well. Add
r.'ilk gradually, stirring until
thickened. Add mustard, string
beans and ham and mix well.

5 large bananas
1 quart milk
2 teaspoons vanilla '
1 pint chocolate ice cream
Peanut Cream Patties
Peel bananas; crush in a large
bowl. Beat with a rotary beater
until smooth. Add milk and van
illa; beat to blend. Pour into
chilled glasses and float a scoop
of ice cream on each. Serve with
Peanut Cream Patties. Makes
6 glasses.
Ice Cream Party
Treat your family and friends
to an old-fashioned ice cream
party. Make your ice cream in
a crank-stylo or electric freezer
and plan on serving it in the
garden or back yard. These
toppings always make a hit
with the crowd chopped wal

roasted almonds, canned cling
peach slices and fresh berries.
