Combine sour cream, diced cucumber and scal lions or onion and chill. When ready to serve add spinach to sour cream mixture until desir ed thickness is obtained. Season to taste. Tomato Souffle 1 rlpa tomatora 2 al:ce bread, crust removed 'i cup milk 1 teaspoon Anion juice aall and pepper 3 tablespoons butter or mar.arln. 3 tablespoons grated cheese U teaspoon basil . egss separated . Remove skin from the toma toes and cut them up very fine. Soak the bread in the milk and mix into a paste. Combine toma tose, bread paste, onion juice, melted fat, cheese, basil, and salt and pepper to taste. Add to this the beaten egg yolks and mix thoroughly. Beat the egg whites until stiff and fold into the to mato mixture. Pour into a greas ed baking dish and bake in a moderate oven, 375 , for 20 minutes or until mixture has set. Sevre immediately. You need not have any dressing for this. Just serve sour cream with a sprinkling of paprika for color. Perhaps you've stuffed avo cados with crab meat. That's about the best known of such salads. But don't stop there. Shrimp in mayonnaise is good in avocados. So is cottage cheese, well seasoned with chives. And a mixture of fruits in avocado is perhaps the prize of them all.
