Weds in Seattle
Hazel Green Friends of the Mi
chael Gehrman family, who resided
here for many years, will be inter
ested to learn of the recent mar
riage of their daughter, Miss Mar
tha Gehrman, to Edward J. Scan
ner of Bremerton. The marriage
took place at the Sacred Heart
church In Seattle, Wash. The Rev.
Thomas McDonaugh, C.SSR. offi
ciated. Emmett Carroll acted as best man

Vancouver, B. C, the couple will be
at home in Seattle.

As I wrote in my column only a few days ago, the majority of
wedding presents that are sent to a bride are sent by those who are
not ory willing that the bride shall exchange something not useful for
something she may really need, but that she shall be able to choose
something In place of a gift that duplicates one probably many-
she already has. Most people buy
every wedding present with the un
derstanding that the store will glad
ly exchange It If the bride prefers
something else. But that this is not
understood by all givers Is made

Most housekeepers like to use
tongue both fresh and smoked. Per
haps the latter is more popular, but
there is nothing better than a fresh
tongue cooked with plenty of herbs.
While beef tongue is used more than
any other type, your meat dealer
may sometimes have smaller tongues
of other animals on hand and you
will find them less expensive. They
really are Just as goodl
Then there is heart which does
not appear on our tables as often as
it might. The flavor Is not unlike
that of fresh tongue and it Is gener
ally much less expensive. I like it
best when It Is stuffed, well browned
and then baked In a small amount
of water. Both calf and beef hearts
are good and I have found that
there is little difference In tender
ness or flavor after cooking the pro
per length of time.
With both fresh tongue and heart,
you will like a sauce with a piquant
flavor. Minced olives, pickles or lem
on juice may be used for this pur
pose, unless you prefer a well-sea
soned tomato sauce.
Boiled Tongue
1 fresh or smoked beef tongue
6 whole cloves
6 ptpporcorns
a bay leaves
1 sliced onion
1 tablespoon salt (for fresh tongue)
Scrub tongue with brush and wash.
Place in kettle and cover with boiling
water. Add seasonings, cover and sim
mer about 3 hours, until tender. Al
low to cool slightly in stock. Remove
from Water and remove skin and fat.
Serve on hot platter and garnish with
parsley. Pass Olive Sauce or Caper
Sauce. Allow pound per serving.
Yield: 8 to 10 servings.
Note: Small tongues from other ani
mals may be cooked by the same me
thod, but require shorter cooking
Allow about li hours for lamb and
pork tongue, and 2& hours for veal.
Baked Slurted Heart
1 beef heart or 2 calves' hearts
4 cups (about) stuffing
flour, salt, pepper
Have fat, veins, and arteries remov
ed. Wash heart thoroughly and fill
cavity with stuffing. Sew edges of
meat together. Roll in seasoned flour.
Melt bacon fat In baking pan and
brown heart on all sides. Add boiling
water to depth of 1 Inch. Bake cover
ed In Mow oven 275'P.) about 2
hours, until tender. Carve crosswise

entirely proper to exchange pres
ents, and even though it may cause
certain givers chagrin to have their
gifts exchanged especially if tho
present was not one ol many dupli
cates and therefore one that could
n't have been liked I The only safe
thing to do is to know which peo
ple are going to care about your
keeping their presents! But you
are really not to be blamed since
you couldn't have known about this
stranger)
The Future In-Laws
Dear Mrs. Post: My sister's fu
ture in-laws have made no attempt
to get to know us. They are nice to
my sister, but they haven't called
on mother or Invited our family to
their house. Mother feels that they
may not approve of us, as a family,
because It is true there have been
a few dark sheep in my father's
family. My sister Is the "whitest of
the lambs." However, our imme
diate family has always been above
criticism. I know mother is hurt.
She can't make up her mind that
they don't know what Is polite, and
is taking their discourtesy personal
ly. I myself think they may be ex
pecting us to make the first move.
How can we find this out?
Answer: Your sister should ask
her fiance, and take his advice as
to what to do.
