United States department of agriculture, with its unequalled knowledge ot marketing problem, that if people would use more of the less costly portions their doing so would re duce prices of living and prices of meat as a whole would be greatly re duced and would be more stable., Cheap Cuts Wasted. "The facta, with reference to the ef fect of the camapign on prices, are as follows: . ' . "At the present'TTnie", neglecforuse less costly cuts of meat, especially those from the fore-quarter, has re tarded the sale and distribution ot these outs; has thus caused propor tionately greater shrinkage and dimin ished volume; has caused some meat literally to be wasted; has caused nu merous retailers to chop and sell to hotels and others, meat cut s which could be used by the consumer to bet ter advantage In Its unchopped form, and has Increased the retailers' over head. Every particle of the loss, shrink age and wastage has been borne by the consumer in the price of all meat which he does buy. The extent of the loss, shrinkage and wastage can be appreciated if it Is remembered that the less costly cuts which excludes the ribs and loins constitute about three-fourths ot the meat animal. Co-operation Sought. "Popular support ot the depart ment's campaign to save money on moat by utilisation . of the less costly portions is hastening distribution and minimizing waste and shrinkage, A wide publlo response will make It pos sible for all parts of the meat animal to find a market, and the utilization of parts now often wasted. or misused should have a tendency not only to save money for those who have bought the most expensive cuts, but also to bring down the price of all meat. "Both the consumer and the live stock producer will receive benefit, It la Impossible for a stockman to raise a steer consisting only ot prime roast beef and porterhouse steaks. At pres ent the avoidable wastage and shrink age suffered on neglected cuts adds to theo price ot the cut which the publlo Is buying. Every carcass cut ot meat Is palatable and nutritious when prop erly prepared. Utilization ot the parts now neglected will mean a stable maiy ket for all parts of the farmer's meat animal. The price received by the far mer will not be decreased by this cam paign but the effect on retail prices to the consumer, by elimination of waste-, shrinkage and uneven demand, Is clear ly indicated In the .statement made by the bureau of markets, which has been quoted above. "Moreover, despite the economic soundness ot the campaign, the depart ment has before and since beginning tho campaign Issued- very drastic in structions to all fnlr price commission ers and United Status attorney to In sure that prices are kept down." , Pershing Witness To Launching Of New Troop Vessel Philadelphia, Mar. 41, General Pershing was a member of the party that witnessed the launching of the army transport Chaumont here today. Miss Julia C. Stlnson of Washington, selected by General Pershing, was tho sponsor. She served In Franco as on army nurse. The general's uniform was plenti fully spattered with champagne when Miss Stlnson broke the christening bottle, on tho prow. Before ttm launching he had laughingly suggest ed that the bottle ought to be open ed and a portion ot Its contents con sumed. "Half a bottle Is plenty for the chlsteiilng," he added. The Chaumont was named by tht; army heads In honor of Ouneral Per shing who made his headuuarters at tho French town of that name, dur ing tho greater part of the time he was In France.
