Pork and apples are natural go
tegethers. For a tasty and satis
fying dinner, serve a casserole of
pork chops and apples, with a
zippy molded salad and corn
sticks.
You'll also enjoy crown roast
of pork, with a stuffing of ap
ples, bread and vegetables, spark
ed with subtle seasonings and
real New Orleans molRsscs.
Pork Chop Apple Casserole

Souffle Rothschild Is one of the
most famous desserts of the
Grande Cuisine. Elaborate in
preparation, regal in result, it is
too much work for the American
home cook. So here is an adapta
tion of the original Paris recipe,
for a gala company dinner.
Souffle Rothschild
(Makes 4 to 6 servings)
',i cup red maraschino cherries,
finely chopped (about 20 cher
ries) Vi cup kirsch or maraschino
cherry juice
Butter .
Sugar
3 tablespoons silled all-purpose
flour
't cup milk
13 cup sugar
4 egg yolks
2 tablespoons butter
2 teaspoons vanilla
5 egg whites
' teaspoon salt

13 cup milk

While pepper as desired,
6 slices American process
cheese
12 slices buttered toast
Melt butler over moderate heat
in 10-inch skillet. Add onion and
green pepper and saulc until ten
der. Combine eggs, milk, salt and
pepper and pour into skillet; stir
' slightly to mix. Cover and conk
over low heat until eggs "set."
Remove cover and loosen eggs
around edge of pan. Arrange
cheese slices to cover eccs. Cover
skillet and heat until cheese soft
ens. Cut into wedges and erve
as an entree on toast, open-face
or between toast, sandwich style

4 cups sliced tart cooking ap
ples i cup seedless raisins
1 teaspoon grated lemon rind
r cup molasses
Vt cup water
Preheat oven to 330 degrees.
Sprinkle pork chops with salt;
saute In shortening until brown.
Mix together apples, raisins and
lemon rind: place in 2 quart
greased baking dish. Combine mo
lasses and water; pour over ap
ple mixture. Top with browned
pork chops. Cover; bake for 1
hour. Remove cover and bake (or 1

Blend 't cup chopped cherries
and kirsch or maraschino cherry
juice together. Let stand 30 min
utes, stirring occasionally. Pre
pare a collar of wax paper to go
around a 7-inch souffle dish or a
l'i quart straight sided casse
role; butter inside and secure
with string. Sprinkle sugar over
entire inner surface. Blend flour,
milk and 13 cup sugar together.
Cook over medium heat, stir
ring constantly until thickened.
Add egg yolks, 1 at a time, beat
ing well after each addition. Beat
in 2 tablespoons butter. Drain
cherries, reserving liquid. Add
liquid, with vanilla, to souffle
mixture and beat well. Beat egg
whites and salt until soft peaks
form. Add 1 tablespoon sugar and
beat until stiff.
Gently fold into souffle nux-
ture.
Pour 13 mixture into prepared
dish and sprinkle with chopped
cherries. Cover with remaining
mixture. Bake in moderate oven
(373 degrees F.) 30 to 33 min
utes. Garnish with U'cup sliced
maraschino cherries, as desired.

Zippy Salad
1 package lemon gelatin
l'i cups boiling water
li cup vinegar
3 tablespoons prepared horse
radish Vt teaspoon salt
1 cup chopped cabbage
Dissolve gelatin in water. Chill.
When almost firm, add remain
ing ingredients and stir. Chili in
individual molds and serve as
garnish with meat.
Roast Pork, Apple Stuffing
cup chopped onions
2 cups sliced tart cooking ap
ples Vt cup diced celery
2 tablespoons butter
V cup molasses
Vt cup hot water
1 tablespoon lemon juice
1 feaspoon grated leimon rind
1 teaspoon salt
'.i teaspoon crumbled leaf sage
1 quart toasted bread cubes
7 lb. crown roast of pork
Saute onions, apples and celery
in butter for 5 minutes. Mix mo
lasses, water, lemon juice, rind
and seasoning.
In large bowl, combine bread
cubes and sauteed ingredients;
toss together lightly. Fill roast
with stuffing, heaping it up In Uic
center (do not pack tightly.)
Bake, uncovered, in shallow
baking pan in moderate oven
(3.30 degrees F.) for 3'i hours (or
until meat thermometer registers
183 degrees F.). Before serving,
fasten paper frills to lip of each
rib, or cover tips with small
pieces of aluminum foil.

Bran Flak Chip Cookies
lVs cups sifted all-purpose flour
1 teaspoon baking powder
Vt teaspoon salt
cup butter (Hi sticks)
cup brown sugar, firmly
packed
H cup granulated sugar
2 eggs
1 teaspoon vanilla
Vt cup milk
i cup chopped nuts
3 cups bran flakes
1 6-ounce package semi sweet
chocolate bits
Sift flour with baking powder
and salt. Cream butter; add sug
ars boalmg thoroughly. Beat in
eggs, one at a time: stir in vanil
la. Add flour mixture alternately
with milk, beating until smooth
after each addition.
Stir in mils, bran flakes and
chocolate bits. Drop from a tea
spoon on a buttered cookie sheet,
and bake in a moderately hot
oven, 375 degrees, 12 minutes or
until done. Makes about 3 dozen
cookies.
EASY DRESSING
Use commercial sour cream
wilh a little lemon juice as salad
dressing for drained canned fruit
cocktail, sliced bananas and
orange sections. Serve on salad
greens and garnish with flaked
coconut, if desired.

Fresh Corn, Bacon Casserole
4 cups fresh corn, cut off lhc- !

1 teaspoon sugar
1 teaspoon salt
Vt teaspoon ground black pep
per ,t cup milk
6 slices bacon, diced
Combine corn, sugar, salt, black
pepper and milk. Turn into a but
tered 1-quart casserole. Cook ba-:
con slightly to dry out the excess
fat. Drain off fat and discard it.
Sprinkle bacon over corn. Bake
in a preheated moderate oven
(350 degrees F.) 1 hour or until
bacon is crisp. (6 servings.)
Corn and Green Bean Skillet
2 tablespoons chopped onion
1 tablespoon butter or margar
ine 2 cups fresh corn, cut-off-llie-cob
Vt cup top milk or undiluted
evaporated milk
1 cup cooked fresh snap beans
H teaspoon sugar
1 teaspoon salt
1 16 teaspoon ground black pep
per Saute onion in butter or mar
garine until onions are limp, about
3 minutes. Add corn and milk.
Cover and cook 5 minutes. Stir
in beans, sugar, salt and black
pepper. Heat 2 to 3 minutes.
Serve hot. (5 servings.)
NUTRITIOUS FUN
Instead of making popcorn balls
for a rainy day activity, make
some raisin cereal confections.
Cook syrup as for popcorn balls
but pour the hot syrup over puff
ed rice cereal, raisins and chop
ped nuts. Mix well and shape
into balls.
