Sprinkle sugar over entire inner surface. Blend flour, milk and 13 cup sugar together. Cook over medium heat, stir ring constantly until thickened. Add egg yolks, 1 at a time, beat ing well after each addition. Beat in 2 tablespoons butter. Drain cherries, reserving liquid. Add liquid, with vanilla, to souffle mixture and beat well. Beat egg whites and salt until soft peaks form. Add 1 tablespoon sugar and beat until stiff. Gently fold into souffle nux- ture. Pour 13 mixture into prepared dish and sprinkle with chopped cherries. Cover with remaining mixture. Bake in moderate oven (373 degrees F.) 30 to 33 min utes. Garnish with U'cup sliced maraschino cherries, as desired. TOPS IN QUALITY!
