Here a new, flnetextured chocolate cake that can be mixed In
we minute. It was developed by Andrea Mackey. research home econ
omist at Oregon State college. The recipe and directions (or making
the "minute-mix" cake are given In the accompanying, story.

says the new chocolate mix, a one
bowl cake, reduces the mixing
time necessary for an ordinary
I cake by 10 to 15 mnutes. It re
quires less mixing time than pack
aged cake mixes.
The new method streamlines
mixing for homemakers. Steps in
mixing have been saved by first
sifting all dry ingredients together.
Shortening, eggs, milk and flavor
ing then are added to the dry in

whites is necessary. When the one
minute of mixing is over, batter
, looks like "chocolate whipped
cream."
Success of the cake depends on

Maxey to Head
Resources Board
SALEM (UP) H. E. Maxey of
Springfield has been elected chair
man of the State Water Re;ources
Board and L. C. Binford of Port
land, vice-chairman.
Maxey, a longtime member of
the Willamette Valley Basin Com
mission, had served as temporary
chairman of the group until his
election here yesterday. Binford
has been prominent in conserva
tion circles.
Don Lane of Portland, who had
been serving temporarily as secre
raiy, was chosen as permanent
secretary.
Mrs. Mackey had to standardize
ingredients so that cakes pre
pared with different mixers would
be equally good. This was neces
sary because each machine has a
different mixing action. Duplica
tion of family-sized kitchens was
maintained as far as possible by
the use of home-mixers and kltoh-
en-size ranges. Between 400 and
500 cakes were baked over the
three-month testing period.
Development of the minute mix
cake is part of experimental work
Mrs. Mackey has ben doing with-
recipes for pie pastry, muffins and
pancakes using soft wheat flours.
A recipe for white cake that can
be mixed in one minute will soon
be released by Mrs. Mackey.
Chocolate Cake Recipe
2 1-3 cups cake flour, sifted be
fore measuring
1H cups sugar
1V4 tsp. baking soda
1 tsp. double action baking
powder ,
14 tsp. salt
Vt cup bitter cocoa
Sift the above ingredients togeth
er. Place in small mixing machine
bowl. (I1,, to 2 quart). Smaller
bowls may be used, but avoid
splashing when mixing is started.
Add the following ingredients:
cup vegetable shortening
1 egg, medium size
1 1-3 cups evaporated milk
Start mixing at slowest speed.
After 5 to 10 seconds, move speed
control to fastest position. Continue
mixing at fast speed 50 seconds.
Total mixing time: 1 minute. Line
oottom ol two 9-inch cake pans
with wax paper. Pour batter into
pans. Tap pans sharply two or1
three times. Bake at 275 degrees
F. (moderately hot oven) 25 to
minutes. Cool a few minutes. Loos
en edges and turn out of pans. Put
layers together and cover with,
your favorite frosting.

ceiving several packages of frozen
peeled and de-veined shrimp from
St. Simons Island, Georgia, recent
ly. They were flashJrozen at ultra
low temperatures, ready for a
brief boiling. Then they can be
chilled and served as shrimp cock
tail. .";;.
This modem shelling and de-
velrong by machines of a high per
centage -of canned and frozen
shrimp takes a lot of kitchen labor
out of home shrimp preparation.

scores, at the second card party
in the current series sponsored by
the Robekah lodge, Saturday night
at tlie IOOF hall. Prizes for sec
ond high scores went to Mrs. Flor
ence Stout and Ellis Marr. Mrs.
Chris Helm won the traveling
prize.
The third party in the series will
be Saturday, Nov. 12. at 8 p.m.
at the IOOF hall. There will be
no card party -thi Saturday, be
cause of the district convention of
the Rpbeknh lodge, in Sisters.

Back to the St. Simons Island
flash-frozen, peeled and de-veined
shrimp Jhere is a wonderful way
to serve them:
Shrimp Amandine
(Scries 4-5)
One-quarter pound butter, 1 cup
blanched, slivered almonds, 2
boxes frozen fully - peeled, de
veined shrimp, salt and pepper, 2
tablespoons minced parsley.
Melt half the butter in a table
worthy skillet (a pretty one if you
have it). Add almonds and saute
over medium heat until a golden
brown. Remove almonds. Add re
maining butter then the trimp.
Fry gently 8 to 10 minutes, turn
ing them over and over until each
is golden brown. Season lightly.
Return almonds and mix well with
shrimp. Sprinkle with parsley and
serve hot over toast points.
Note: Cost of this amount of bai
ter should be figured in the cost
of the dish as a whole. Butter with
the almonds makes the "sauce"
for shrimp. (Margarine may be
used).
TOMORROWS DINNER: Have
Shrimp amandine, steamed rice,
stowed tomatoes and okra, crisp
rolls, buttor, mixed green salad,
French dressing, angel food cake
with crushed strawberries, coffee,
tea, milk.
