Baked Potatoes With Cheese Good For Outdoor Dinners For an outdoor dinner, don't overlook potatoes scrubbed and oiled and baked in foil. Here is a variation with cheese baked-in. If you preler, you can bake the po tatoes in the oven. Here's a recipe, too, for a delectable fresh fruit compote, good indoors or out. Cheese Baked Potatoes (Ylelil: 6 servings) Six large (3 pounds) baking po tatoes, 6 to 8 ounces sharp Ched dar cheese, 6 pats butter or mar garine, ii-inch thick; 1 teaspoon salt, teaspoon ground black pepper. Pare potatoes. Cut 3 crosswise wedges Vi-inch thick in each pota to, having the wedge cut almost to the bottom of potato. Place on squares of aluminum foil. Cut cheese into 18 It-inch slices, as long as the potato is wide. Insert a slice in each wedge. Top with a pat of butter or margarine. Sprin kle with salt and black popper. Wrap in the foil being sure to overlap at top of potato. Turn up ends and fold against potato. Bake until tender on barbecue grill turn ing 3 to 4 times to bake uniform.' ly. (If desired bake in oven one hour.) Serve in foil, turned back and crumpled around bot tom of potato to make it look attractive. Fresh Strawberry and Pineapple Compote (Yield: 6 servings) One - half cup sugar, 1 cup wa- tcr, 2 tablespoons fresh lime juice 1 tablespoon chopped fresh mint, 2 cups fresh pineapple wedges, 2 cups sliced fresh, strawberries, sprigs fresh mint for garnish. Bring first 4 ingredients to a fuil rolling boil. Boil 3 to 4 minutes. Strain. Pour over wedges of fresh pineapple. Chill. Just before serv ing add strawberries. Serve in tall sherbet glasses. Garnish with sprigs of fresh mint. TOMORROW'S DINNER: Have broiled steak with steak sauce, cheese baked potatoes, corn-on-cob. tossed tomato salad, hard rolls, butter or margarine, fresh fruit bowl, coffee, tea, milk. If you have berth double and sin gle beds, it's often hard to pull out the correct number of the correct kind of sheet from a stack of linen.
