(NEA) If the American homemaker can scarce ly fight her way through dinner preparation because of all the gad gets she's supposed to use, she has one man to blame for the ma jority of her woes. That man, a 31-year-old busi nessman, is David Margulies, of Newark. He thinks of himself as the "gadget king" or the "house wives' best friend, but many women wound 't swear to the lat ter title. Margulies' palace is a . vortex for the whirlpool kitchen gadget industry. From it whirl dozens of garlic presses, potato bakers, French-fry slicers, food choppers, mincers, warmers, servers and only Margulies knows what else. These labor-saving devices go out to local houseware stores and hardware mongers and by mail order. They eventually get tangled up with batches of other gadgets the kitchen drawer. Many are a real boon. The po tato-baker, a sort of bed of spikes upon which a dinner's worth of potatoes are Impaled, causes pota toes to bake evenly In less time. Demon Margulies has invented and marketed an affair that slices a potato into rrencn lry slices in a trice. ' Say the good wife has peeled the potutocs, preparatory to boiling them. Husband comes into tho kitchen, seeks out the gadget he bought and in a few minutes has sliced enough potatoes for the American Jeague on a hungry day. The enslavpd cook must then heat up the fat, blanch, fry, drain and warm the potatoes and then get rid of the boiling fat. Husband doesn't like French fries that well anyway. They give him heartburn. But he bought the gadget, so what can one do? Margulies likes all this. He likes to sell labor-saving devices. Aft er all, madamc homemaker didn't have to slice the potatoes, did she? It all started at David Mar gulies' mother's knee. He saw her doing the commonplaces of home- making and swore that his wife, which he didn't have yet, would never have to do these onerous tusks. Cooking would bo fun Four years ago, he did get mar ried and had to make his promise good. His first item to ease pretty Mrs. Margulies' way into home- making was the gourmet's dowry, the garlic press. He had heard about it from friends in Italy. There were none here. So he brought the garlic press to the American shores. A garlic press, for those who don't own one, looks like a doll's potato ricer. The garlic dove goes into the pot and gets mashed out in long odorous strings. Margulies has sold more than a million and a half garlic presses in less than three years. As a consequence of the garlic press, the potato baker, the flame- tamer, the steam basket, the meat chipper and about a thousand oth er items, Margulies is a very rich man at 31. And the American home is cram full of little mechanical things. Cereal Squares Plain and Fancy This recipe has everything! It's a two-in-one confection that can be plain and fancy. Make one-hnlt with almonds, coconut, marshmal- lows and crisp corn flakes for the Plain Jane version. Add evex-pop- ular chocolate for the fancy part. Either way, this confection is chewy and Ilnvorsomc, bound to! please the most discriminating. Marolimiillow Flnko Squares I'luin and Fancy 'a cup slivered almonds t cup shredded coconut l-!i cup butler or margarine, melted 'i pound (about 32) marsh mallows 4 cups corn flakes cup (3 oz.) semi-sweet chocolate pieces ' Combine slivered almonds and shredded coconut in shallow pan and place in slow own (325 de grees F.) for about 10 minules until coconut is lightly browned Melt butter in 3-quart saucepan. Add murshmallows and cook over low heal, stirring constantly, until niarshmallows are melted and mix ture is well blended. Add toasted almond-coconut mixture and corn flakes, stirring until corn flakes are well coated. Press mixture lightly into but tered 13-9-inrh pan. Molt chocolate pieces over hot but not boiling waler and spread over half of Marshmallow Flake mixture. Chill in refrigerator un til chocolate is hardened. Cut both plain and chocolate- covered mixtures into 2-inch squares. Yield: 1 each plain and choco- liuo-froslod squares. Here's an Idea For Quick Lunch When you have just a dab of leftover vegetables you can make curried vegetable soup for lunch eon. The recipe calls for cooked celery and carrots, but other veg etables could be substituted. With buttered crackers, deviled eggs, lettuce salad and cookies, you have a complete meal. Curried Vegetable Soup 4 Tbsp. butter la cup finely diced onion 3 'Tbsp. flour 2 tsp. salt Vi tsp. pepper 4 cups milk, scalded 1 cup cooked, diced green celery 's cup cooked, diced carrots 1 tsp. Worcestershire sauce " 1 tsp. curry powder 3 Tbsp. minced parsley Melt butter, add onion and cook, over low heat, until tender. Add flour and seasoning; blend. Stir in milk and cook over low heat until sauce boils and thickens, while stirring. Add remaining ingredi ents, blend. Heat through and serve. Serves 6.' Blue Cheese Dressing 1 ounce Blue cheese cup salad oil W cup cider vinegar 2 Tbsp. lemon Juice 1 tsp. salt 1 tsp. sugar H tsp. paprika Crumble the cheese, or press through a coarse sieve, add re maining ingredients arid blend thoroughly before serving. Makes 1 cup. l Turkey Specialty Succulent Dish Sauteed turkey steak, with spe cial sauce and mushrooms, is n specialty of Eddie Lane, the yount-' American diet at the new Tread way Inn in Rochester, N.Y. Heir are the directions for making tlv. succulent dish: Sauteed Turkey Steak, and Supreme Sauce With Mushroom (Serve 4) Four frounce slices of cooked white turkey meat. These slice- should be cut cross grain, ,aboul 'a inch in thickness, 3 ounce? butter or margarine, M cup flour 1 cup egg dip (2 eggs beaten witl; cup milk). Dredge turkey slices in flour and submerge in egg dip. Saute in frying pan in the butter or mar garine, which has been heated u a light brown color. Fry golden on each side and serve with the su preme mushroom sauce. Supreme Sauce With Mushrooms To 1 cup white cream sauce add 14 cup chicken or turkey; stock, Vi cup scalded light cream dash of nutmeg, dash of cayenne, 1 teaspoon lemon juice. Mi cup cooked sliced mushrooms. Note: Chicken or turkey stock is the juice from cooking chicken or turkey or by simmering ths bones, wings, or necks for a suffi cient time to extract a juice with; a reasonably strong chicken or turkey flavor. A quick dough is made and rolled out into a rec tangle. Crisp, oven - toasted rice cereal, butter, mustard and milk are added to the ham and spread over the dough. Then rolled, jelly- roll fashion, and baked about 30 minutes in a hot oven. Serve with a sharp cheese sauce and you have I he most economical of dinners, suitable for family guests. Until KoIIm With Cheese Siiiico 2 cups sifted flour 4 tsp. baking powder H tsp. salt cup shortening I'a cups milk 1 cup ready-to-serve rice cereal 2 cups ground cooked ham 2 Thsp. soft butter or margarine l'i Tbsp. prepared mustard Sift together flour, baking pow der and salt: cut in shortening un til mixture resembles coarse corn meal. Add cup of tho milk, stirring with fork only until com bined. Turn out on lightly floured hoard, knead gently a few times. Roll out into a rectangle about 15 by 8 inches, Crush rice cereal slightly; combine with ham, but ler, mustard and remaining milk: mix well. Spread over dough. Here is a favorite home-tested recipe for Poppy Seed Cake, using packaged instant yellow cake mix The cake is baked in two square pans and is served with a custard: filling between the squares and a simple glaze on top. Poppy Seed Cakp One-quarter cup poppy seeds 2-3 cup water, 1 package instant yellow cake mlx,.2acggs, unbeaten 'ii cup water. Custard Cream fil ling, confectioners sugar glaze. Soak poppy seeds in 2-3 cup; water about 1 hour. Then plat: cake mix m bowl. Add poppy seeds and water, eggs, and muiiung '"j cup water. Beat 3 min utes until smooth and creainv Pour into two 88x2-inrh square pans, which have been lined on bottoms with paper. Bake in mod erate oven (3;0 degrees F.I about 35 minutes.
