Chocolate Chilton Birthday Cake 2 eggs, separated Jt4 cups sugar 1 cups sifted cake flour tsp. baking soda tsp. salt 1-3 cup salad oil 1 cup buttermilk 2 squares (2 oz.) unsweetened chocolate, melted 14 tsp. almond extract Heat oven to 350 degrees (mod erate). Grease and flour two 8-inch layer cake pans at least H4 inches deep. Beat egg whites until frothy. Gradually beat in a half cup of the sugar. Continue beat ing until very stiff and glossy. Sift remaining one cup of sugar, flour, baking soda and salt into another bowl. Add oil and half cup butter milk. Beat 1 minute at medium speed on mixer or 150 vigorous strokes by hand. Scrape sides and bottom of bowl constantly. Add remaining half-cup buttermilk, egg yolks, melted chocolate and flavor ing. Beat one minute more, as above. Foldj meringue thoroughly into batter, cutting down gently through batter, across bottom, up and over, turning bowl often. Pour into prepared pans. Bake '30 to 35 minutes. Cool on cake racks. Split ench layer into two layers. Snread pink-tlntcd, almond-flavored 7-min-ute frosting between layers and on top and sides of cake. If necessary, add water or additional beer to cover ifood. Remove from cooking li quid. Before serving, eplit lobster tails by cutting lengthwise through thin undershell.
