When it comes to pancakes, the Scandinavians have always been known for the richness of their concoctions. They make the most of such simple food. as homey but termilk pancakes, cream cheese and lingonberry sauco, until the final result is extravagantly good. Many superlative desserts are built around the native lingonber ry, as in this recipe for lingonber ry stack cakes. For lingonberry stack cakes, the pancakes are baked larger than average and then, as each pancake stacks atop the next one, a generous portion of cream cheese, spiked with orange rind, is spread over each. Warm lingonberry sauce spooned over Ihe top adds the crowning touch. You'll love its tingle-fresh flavor in contrast to the rich cream cheese. Maybe you were lucky enough to receive a jar of lingonberry sauce in a holiday box. If you haven't used it yet, this is the ideal way to enjoy it to the fullest. Or look for it in the gourmet section at the grocery store.
