SeDt. 2 (Steclal) Now that tomato season is on hand, canned tomatoes are sug gested as an excellent source of Vitamin C during the winter months when fresh fruits and vegetables are off the market, by Miss Agnes Kolshorn, nutrition specialist at Oregon State col lege. - Studies made using Oregon school children have shown, Miss . . Kolshorn adds, that small amounts of ascorbic acid a prime source of vitamin C was . present in their diets especially during the spring months. With a low amount of vitamin C in the diet, persons may not necessarily become ill, but they will feel more lit 11 they eat suincient loou containing ascorbic acids. Tomatoes are among the best sources of this vitamin. Other sources Include green peppers, ' v turnips and turnip greens, green cabbage and rutabagas. Fresh ' and cauliflower are also n.i good sources or vitamin c, Miss juiojivi 11 alius. Heavy in Vitamin C One good sized, vine-ripened InmAtn. fm pvnmnlfv will piv i about one-half of the day's quota' ' of vitamin C. Per serving, the . amount of vitamin C contained in potatoes is not particularly im pressive, but the fact that they are eaten frequently makes them a significant source of the vita ' mln. Potatoes boiled whole in their skins or baked retain much of their vitamin C content, Miss Kolshorn points out. Miss Kolshorn has enumerated three ways to ' avoid cooking ' losses of vitamin C. They are! One, cook in small quantities of water; two, reduce cooking time; and, three, cook large pieces. More expensive sources of vita min C include oranges, grapefruit and lemons. A serving of canta loupe and fresh strawberries will also supply about one-half of an adult's daily requirement of vita min C. However, strawberry jam is not a source, Miss Kol shorn adds, if it has been cooked too long. .. Vitamin C is known as the anti ' scurvy vitamin. It was a defi ciency of this vitamin that trou bled sailors and explorers In sail ing ship days. . S.V.
