JUNE 14. 1948 Chinese Gourmet Says Yanks Don't Know How To Eat By Virginia MacPherson Hollywood, June 12 tV'A res taurant owner who inherited the talent from his honorable ances tors says Americuns don't know how to eat. And the reason they don't Is that they're all lousy cooks. Trouble is, Benson Fong snorts, when they get through with an egg it tastes like an egg. That's enough to disqualify 'em right there; Then what do they do? They smear ketchup all over it, that's what; And to a ' Chinese gourmet that's revolting. Look around you, Fong shrugs. Did you ever hear of a famous chef who was an American? "No," he said. "All the big hotels hire Frenchmen or Aus trians or Germans or Chinese. People who know what to do with food. People who can make It taste like something without making the customers sprinkle extra goo on top." Yanks Fizzle Out Yankees fizzle out in the kltch chen because they have no pa tience, Fong has decided. No imagination, cither. A man with the heart of a true chef is forever mixing vittles up in different combinations, he said. Wonders how wild racoon would go with bamboo sprouts, say . . . or pea pods. And keeps experi menting until he finds out. "And usualy it's a delicious new delicacy," Fong added. "But not you Americans. Vou can take the taste of beef or lamb or pork just so long, he says, and then you have to have a new kind of flavor. That's when you reach for the red stuff. Man of Conviction Mr. Fong is a man of convic tion. He Just opened a new Chi nese eating place In Hollywood. We were afraid It was just us.
