APRIL 11, 1917 WHOLE WHEAT RATED HIGH AMONG FOODS Use Will Greatly Lessen Breakfast Cereal Cost Directions for Cooking are Given. . By Carl Vrooman, . (Assistant Secretary of Agricul ture. Member National Emergency Food Garden Commission.) WASHINGTON, D. C, April 11. Whole wheat which can be bought in the grain at seed or feed stores, is one of the best all-around cheap and nutritious foods In the country. Ev ery American home should keep a supply of whole wheat. When soaked for several hours and cooked an equal length of time, it makes a delicious breakfast food. Ground in a band grist mill which can be bought for three or four dollars, it is equally palatable when made into bread or used as a cereal. It has been estimated that whole wheat, cooked over night in a fire less cooker, or cooked all day on the back of the kitchen range, makes a cereal costing one-sixteenth the price of some of the patent commercial breakfast foods, and furnishes, more - over, fully equal nourishment. Whole wheat may be cooked with out cracking or grinding, but it re quires many hours in a double boiler to cook thoroughly. Whole wheat ground, in a hand grist mill should be cooked at least three hours over the fire or all night in a tireless cooker. To have the best flavor it should not be too moist. The longer it Is cooked the better. It is possible to cook up enough for several days and warm it over as desired. If whole wheat is soaked several hours, it will not need to be cooked so long. The Bureau of Chemistry has now worked out a recipe for bread made primarily from home ground meal. Two cupfuls of wheat meal, 1 cup ful of white flour, 1 4 cupfuls of lukewarm water, cake of com pressed yeast, 1 level tablespoonful of salt, 1 level tablespoonful of Ily II. ('. Hamilton, (United Prraa Staff Correeiomdcnt.) NEW YOKK, April 10. -KnulylnK to a request from the United I'ross for a statement of their beliefs re garding the success of major louguo baseball this year. Unit Johnson, president of the American league, and John K. Toner, president of tho National league, today niado very optimistic forecasts. Neither is willing to pin his faith to a certain club and Johnson goes pretty strong In predictions that Con nie Mack will make his rivals step a little this summer. Anyhow, they're optimistic, which is something to say in the face c t the international crises, and follow ing Immediately o the yuan' of tur moil which have shaken the l utlminl pastime to its foundations. By John K. Tenor, president of the National League. We anticipate a tremendously successful season for basoball this year. .We look for ward to the National league race be ing as sensational and close as it was in 1916 and 1916. While I am not unconscious to the fact that the Giants look to be an exceptionally strong combination, offensively and defensively, I cannot believe they will make a runaway race of it. Even though the twirling corps should per form in superior manner from the start, I do not believe anything of that sort is likely. Boston and Philadelphia are sure to be contenders for the flag. The champion Brooklyn club will take (he field this year with every player who gave it strength last season and in addition, Manager Robinson seems to have picked up some youngsters who will certainly make the team look better than it did a year ago. This boy Fabrique has played a re markable fielding game and also has hit exceptionally well in training. Boston was strong last year except in hitting. Even in that department the strength was there, but it seemed impossible for them to get started when the hits counted. The west must not be overlooked President Dreyfuss, of the Pittsburg club, picked up several promising youngsters last year and when the season closed his team was playing interior to none in the league. Pitts burg is building from the ground. Manager Callahan has several good pitchers and catchers and enough old players to form a nucleus for a strong team. Cincinnati Is expecting great results from Manager Mathew son, and I personally believe the Reds will do better than they have for a long time. I have great faith In Matty. Both Miller Huggins in St. Louis, and Fred Mitchell in Chicago, are trying to reconstruct new teams from the best of the old and the new ma terial. Both are good managers and would not be surprised if each de veloped a strong team. The club owners will spare no expense or ef fort to give their respective clubs the best players it Is possible to secure. By Ban Johnson, president of the American league. In the history of the American league there never was a year when the organization was, so well equipped for a championship race. A few days ago I received a letter from Connie Mack in which he gave me the assurance that he bad a vastly improved team over the club of last year and one that was sure to prove factor in the championship race. If we can accept this declaration then there are eight contenders, well balanced for a gruelling fight. Everyone will concede that Chi cngo, New York and Detroit tiro sure I to bo prime favorites. The Cleveland club has been greatly strengthened, which Is attested by tho fact that Morton hus shown till the strength he developed in the boglnulug of Inst season. Joe Wood claims his right arm has been well restored, bo with Covuleskle, ltagby and Klepfor In support, Cleveland Is suro to have u formidable staff of pitchers. Many wiso baseball men contended last fall that New York would huvo carried oft the priio had It not been for tho Innumerable accidents which put some of Its best players out of commission during tho summer. The St. Louis club, under tho lead ership of Jones, must be reckoned with. Had the Browns started their tremendous drivo earlier In the sea son tho pennant might have gone to that organization. We all know of Boston's worth, and the fighting spirit of tho Sena tors, under the guidance of that wiso and skillful manager, Clark Griffith. War may place an Indelible mark upon our putronago, but it cannot stamp out a contest tha,t is sure to bo keen, thorough and exciting from tho tap of the bell until the finish in October. Upward of 200 active poultrymen attended these meetings at which such topics as in cubating and brooding, feeds and feeding, breeds, diseases, etc., were discussed. Mr. Lamb was very much pleased with the poultry outlook in the two counties and stated that there are few sections of the state showing so much well directed efort in this line as Is found here. The associations at Prlnevllle and Tumalo are among the first to be organized in Eastern Oregon. These associations are di recting their first effort to the pro duction of better grades of poultry and on a sufficient scale to make the marketing of a uniform product In paying quantities possible In the fol lowing years. When this is accom plished they will turn their atten tion to the marketing of their pro duct by more approved methods than ,are being practiced at present. PATENTS INCREASE IN GREAT BRITAIN (United Presa Staff Correspondent.) LONDON, April 11. In the sec ond full year of the world war there were 18,686 applications for patents registered at the British paent office. This represents an increase of 461 applications over the previous year. A good proportion of the applications were made for patents on Instru ments and munitions of war. Arti ficial legs are being perfected, too, the list shows. It is a curious fact that the only patent granted an enemy alien since the war began was Issued to a Ger man. It was a process for grinding swords, and licenses have been Issued to Sheffield firms to use the new invention. $16,022.63 TAKEN IN FOR COUNTY TAXES The first turnover' on taxes col lected was made today by Sheriff S. - B.
