Grcssman, minis ter. , , - Much Interest Is evinced by, l)ma tllla county girls In the brcad-bitking contest to be held here during the Northwest Grain and Hay Show. The contest Is for girls between the ages of and 18, and the prizes are to be given for the best loaf of bread baked by the indlvlduaLand exhibited the morning of September 22 at the high school In Pendleton. All of the breed that Is sent in to be Judged will be ex hibited at the Northwest Grain and Hay Bhow tent from September 22 to 24. The first prise is 110, the second prize Is 17.10, the third prise IG.OO and the fourth prize 2.60. The girls are 'not required to be club -members ' la order to compete In this contest;' Mrs. Edith Q .Vun Deusen, home demonstration' agent, who Is In charge of the contest, gives the following sug ge.it Ions to be used In breadbaking; ' A loaf of bread should be light In , weight, considering Its size, and should have a symmetrical form and an un broken, golden-brown crust. .; i The crust should be smooth on top ' and should have a certain luster, to which the term "bloom" has been given. The kinds of yeast most commonly Used are compressed, dry, and liquid yeast The first-named Is very con venient, for In this form he yeast , plants ore active and ready to begin thir work. However, It Is not easy to keep It long in good condition and so Is commonly purchased fresh each . time It Is needed. When In good con dition compressed yeast is soft and yet brittle and Is the same color throughout, a , creamy white. It should have no odor except that of yeast, which Is familiar to most peo ple but difficult to describe. Com pressed yeast may now be obtained by parcel post either from manufactur ers or from dealers. It Is therefore, no longer out of reach of those who are far from markets. i Here Is a good liquid yeast recipe: " 4 medium sized potatoes, washed and pared. v 1 quart hot water. - 1-4 cup sugar. 1 teaspoon salt. 1 cake dry yeast soaked In' 1-4 cup ; lukewarm water, or ..,'; 1 cake comprjaxsed yeast. Clrste or grind the potatoes directly Into the water (a food grinder Is coni v( tilent for the purpose). Boll about five minutes, stirring constantly. Add the sucnr nnd salt and allow the m'x tun: to cool. When lukewarm add the 'fi-8t. Keep at ordinary room tem perature (shout 70 desreest for 14 hours, when It will be ready for use. The yeast should be kept tin a cool. dark place. An earthern Jar or ennm- el-ware pall Is a good container for It and should be scalded before the yeast Is put Into It. In making bread a small amount of dough may b saved for use in place of yeast at the next baking. The same care, however, must be taken' with II as with liquid yeast; It must be kepi covered and In a cool place. Milk.' ' , , ' " Whole or skim milk? may be substl tuted for part or all of the water flseA Ih making bread. ' It should be scalded thoroughly before use. When , th long or overnight process is followed, it Is well not to use milk in the sponge for it Is likely to turn sour. ' YnU ' - ; ' -: 1 Fit, If used, may he butter, lard, beef fat, cottonseed oil, or any other of the ordinary fats Used In cooking, rt should, however, be wholesome, of good quality, and In good . condition. Bread Is so little Improved by tho ad dition of rat that it Is a mistake to ru.i the slightest risk of IrtJuring Mts f:avor by using fat of questionable quality. ythians Attention onday, Sept. i 1 5th Music, Entertainment, Eats MEMBERS COME, MAKE THIS A BIG YEAR FOR PYTHIANISM.
