perfectly clear, which requites, about
seven hours. Return the clear lkjiild
to the preserving1 kettle, being care
ful not to pour off any of the sedi
ment. Fill the vessel only about half
full, as It foams up when boiling. Add
a level teaspoonful of the calcium car
bonate for the seven gallons of liquid
and boil rapidly until a temperature
of 200 degrees is reached, or until u
is about one-seventh of the original
volume and the consistency of maple
sirup when cooled rapidly and poured
from a spoon- t
To insure' clear sirup the cooling
must be done slowly A good way is
to set the jars of sirup In a wash-
boiler hot water and allow the whole
to cool. I'se this sirup like any other
table sirup, and as, a. flnvorlng ad
junct. Also as.sance for puddings
and for making brown bread, fruit
cake and, cajidy.

1 1-2 quarts water.

4 sticks cinnamon.
4 tablespoons allspice. '
8 lbs: sweet apples.
-I tablespoons uhground cloves.
1-2 teaspoon salt.
Cook together, the vinegar, water.
sirup and spices for 5 minutes. Peel
and quarter the apples. SUck 2 cloves
into each quarter. Drop the apples
into the boiling sirup and simmer un
til tender. PacK in hot jars. Cover J
with boiling sirup. Partially seal and
sterilize for 10, minutes. Seal tightly.
Let cool.v Label and tore.
Apple Catsup.
1 quart unsweetened apple sauce.
1 teaspoon ginger.
1 teaspoon cltyiamoit, 1
1 teaspoon cloves.
1 teaspoon pepper.
1 teaspoon mustard. 1 ' '
1 teaspoon onion extract. '
2 teaspovns salt. 1 '
1 pint vinegar. '
Simmer slowly until thick, bottle
i and. seal. A similar catsup can be
nale from plums and grapes, and
spiced to taste. Sorghum brtnolasses
may be added If a sweet- sauce la
liked. '

Pare, core and slice, dropping slices
Into cold water containing eight tea
spoonsfuls of salt to the gallon, if a
light-colored product is desired. Lieave 1
them a minute of two in the salt water
will prevent discoloration. (If preferr
ed, core the H-hole fruit, after peeling
and slice into rings, dipping these for
a minute or two into cold salted water
as described above.) Remove surface
moisture. Dryinff time is 4 to 6 hours.
