A quarter of a cupful of rice (care
fully washed), two tablpspoonfuls of
sugar, one saltspoonful of salt, one
pint of milk.
Mix all the ingredients well, pour
Irto a small baking dish and bake
for two hours, rather slowly at first.
Cut the crust several times and stir
Ic into the rest of the pudding. Let it
brown before taking from oven.
Apple Tapioca, or "Bird's Nest
Pudding." Combinations of apples
and tapioca are attractive and nour
ishing dessert)) for a baby from two
years of age.
A quarter of a cupful of granulat
ed tapioca, one tablespoonful of su
gar, a pinch of salt, one pint of boil
ing water, three tart apples, sugar and
nutmeg.
Mix the tapioca, sugar and salt, pour
the boillnar water on slowlvand cook
a double boiler for fifteen min
utes. Pare and core the apples and
fill the holes with sugar and a little
nutmeg; then pour over these the
tapioca mixture. Cover the dish and
bake for half an hour. This may be
served with a little cream and su
gar. Baked apples, apple sauce, clarified
apples, "apple snow," stewed prune
and prune Jelly are all suitable des
serts for a baby from the time he Is
one year old.

Approve Corn oil as Food.
That oil made from corn can be
used as a substitute for olive oil In
fcod is the conclusion reached by
Dean L. E. Sayre of the University
of Kansas School of Pharmacy after
a series of experiments. Corn oil is
a by-product of cereal manufacturing.
It comes from the heart of the corn
and has a golden yellow color, light
characteristic odor, and a pleasant
taste, similar to that of freshly ground
cornmeal. It can be used In a num
ber of ways in the kitchen, being es
pecially valuable as a substitute for
lard.
Plant Supports'.
The steel rods from old umbrellas
make fine plant supports, says the
Chicago Inter Ocean. Disconnect
them where they Join the upper part
and also where the ring slips the
handle, and you have a double rod
to slip Into your flower pots, and If
they are painted green they are un-noticeable.

HEItMISTON, March 21. Prof.
Pittman, field representative of the
state normal school, accompanied by
County Superintendent Young, visit
ed Hermlston, lecturing in the high
school to the pupils and their par
ents. A dance was given by the married
man of the town on the 17th and
proved one of the most enjoyable of
the season. It was given In the Her
mlston Mercantile hall, which was
decorated most attractively In colors
of the day. The United Orchestra of
Pendleton furnished the music. The
dance was attended by about thirty
couples.
About fifteen couples of the young
er folks of the town Journeyed to
Stanfield In machines to attend the
St. Patrick's dance.
. The ladles of the Baptist . church
were hostesses of a silver tea on
Tuesday afternoon at the residence
of Mrs. B. T. Youel.
Mrs. C. W. Kellogg was the hostess
of a delightful luncheon yesterday in
honor of her mother, Mrs. McDon
ald of Mlneapolls, and Mrs. McCoy frf
Omaha who is visiting her daughter,
Mrs. C. E. Baker.

Politicians Rather in Indianapolis.
INDIANAPOLIS, March 20. State
politicians of high and low degree
gathered here today to attend the
democratic state convention which
opens today, when democrats of na
tional prominence will attend as hon
ored guests and speakers. There
will bo exploitations of rival booms
for every office in the coming state
and congressional elections during to
night and for the remainder of the
time the convention is in session.
Various district committee meetings
are scheduled for tonight.

a recent meeting of the city council
a contract was awarded James Atch
ison of this place for the digging of
a well which Is to be the first unit
of Umatilla's municipal water works
for which the city voted bonds for
$20,000.

Municipal Railway Pays.
8AN FRANCISCO. March 21. The
Geary Street Municipal Railway is one
of San Franciscos best paying Invest
ments. Its accumulated earnings now
amount to $263,240, according to fig
ures given 'out here today. The road
began business In December, Uli
The Union Street Line, since It came
Into possession of the city, shows
earnings of Just about one half of that
of the Geary street line. This Is con
sidered remarkable by city officials as
the Union line Is less than half the
length of the Geary street line.
