In all discussions on the price of
beef, tho fact that the American peo
ple demand only the beat cuts and
Ignore the cheaper olios, which are
equally nutritious, stands out promi
nently. That fact Is one of the reasons why
beef Is not cheaper, and If the people
could be educated to realize the truth
o' It, and would buy accordingly, the
price on all cuts would become nearer
ruiial and the high price cry would
disappear.

the peculiarities of consumers In
their systems of marketing, and
among other things he points out the
mistake made by people of limited
means on always selecting the choice
or most expenslce cuts of meat, when
many of the unsought, cheaper parts
of the animal are equally or eyen
more nutritious. His comment was
as follows:
Although epicureans admit and
chemists demonstrate that the neck
pieces Is toothsome and nutritious, It
bears the lowest price. In fact, It
would hardly be considered respect
able t oask the butcher for a piece of
the neck. Perhaps a low order of pro
ficiency In the housewife's cooking in
the past gave to the neck piece Us
low place. The story might have been
different had the housewife of former
times possessed the French house
wife's ability to utilize meats In the
making of attractivei and delicious
dishes. The point of the argument Is
that cheap cuts of a good carcass are
as good as expensive pieces when Ju
dlclously selected and properly cook
ed. American butchers complain that
the average housewife has littlfe
knowledge of the art of cooking. She
does not know how to make a ta.ity
d'sh of the cheap grades of meat. She
therefore buys the best steaks, slaps
them on the frying pan or broiler and
plaees, them on the table when she
thinks they are properly cooked. On
the other nlde of the Atlantic the cuts
are placed on a more equal footing,
the demand for the different cuts be
ing more general.
On this side the laborer's wife Is
mere likely to order ennps or steak
than to ask for brisket or neck, and
In consequence It pays big packers to
send barrels and barrels of brisket
and the cheaper cuts to England,
while in many races our retail butch
ers will prefer to purchase more of
the portions from which ho cuts the
so-called "choice" cuts than to stock
up with the entire carcass and run the
risk of having a quantity of cheap
cuts left upon his hands.

nutritious as parts that require more

sirloin costs more than any other cuts,
it contains loss nutritive value than is
found In the cheaper cuts.
That It should be Is one of the wise
economies of nature. The class of
people who do the hardest labor, and
particularly those whose occupation
takes them much In the open air,
need the nourishing and sustaining
qualities of the heavier meats. These
are found In the less expensive part.-,
In the meats which are rich In juices,
with bones heavy with marrow.
Stews and bruised meats, and those
steamed In their own juices, such as
pot-roasted meats, give the most
nourishment and add to the physical
strength. Teach the people this and
tho demand for the so-called "cheap
tuts" will Increase.
The butcher's chance for selling tho
whole steer nt a fair price would
then be greater. Is It not fo the -ul-vmtage
of the butchers to do their
part In Instructing the public on the
point? The government has none a
little In this direction; it shouM do
more.

Berkman, the anarchist, will spend
the next few days in Jail. He was
convicted In the night court at an
eiyly hour this morning of Inciting a
riot In a meeting at Cooper Union
and was sentenced to the workhouse.
Mav Smith, a woman who was ar
rested with him, was fined $10.
Berknmri, who during the steel
works strike at Homestead, Pa., a
number of years ago, shot H. C. Frlck
and served a Jong sentence In jail
for the act, attempted to preach an
archistic doctrines at a meeting of
the unemployed under the direction
of the Brotherhood Welfare associa
tion. Tho meeting was organized by
J. Eads Howe, known as the "Mil
lionaire Hobo" and Dr. Hen Relt
man, "King of the Hoboes." Dr.
Reltman read a speech which he said
bad been written by Emma Gold
man, and was followed by Charles
Oberswager, former president of the
Central Federated union, who se
verely criticised the anarchist doc
trines In the address. It was while
he was speaking that Berkman caus
ed a disturbance and Insisted on being
allowed to speak.
Police swarmed Into the hall and
after a struggle restored a semblance
of order, tho audience having started
a small riot, me women giving ei
name as May Smith, who attempted
to assist Berkman, was arrested.
Emma Qoldman, who was present, .In
stantly left the hall when told that
unless she went she also would be ar
rested. .

Grants Pass, Ore., Sept. 9. Mrs.
Embler, who resides on a farm- In
Williams valley, was arrested yester
day and brought to this city by Sher
iff Russell for shooting at a party of
young people who passed her place
late Saturday night. The young peo
ple were out driving and coming to
the Embler farm took note of the
clusters of fine grapes which hung
from a vine Just over the fence.
One of the party, Miss Hattle Wil
liams of this city, ".rawled over the
fence and attempted to pick some of
the fruit. Mrs. Embler came out from
the house and fired upon the tres
passers without warning. Miss Wil-
ams was badly peppered with bird-
shot, and other members of the par
ty were also Injured. Mrs. Embler
was not placed In Jail, but Is kept at
the home of Sheriff Russell, and will
remain there till given a preliminary
hearing.
