Chafing Dish Recipes By the Thursday Afternoon dub The following excellent chafing dish recipes are furnished the public by the Thursday Afternoon club of thla cny, wnicn recently brought a do meatlc acience demortstrator here to conduct a aerlea of cooking lessona. Theae recipe are a part of those used oy me aemonstrator. Creole Clams. Twenty-five hard shell clams, 1 heaping tablespoon butter, 2 cloves, H bay leaf, 1 stalk celery, 1 slice onion and carrot, 1 heaping table apoon flour, 1 cup atewed and strain ed tomato, 1 tablespoon green pepper, 1 tablespoon minced parsley; salt and pepper. Wash and pick over the clams. Steam till they begin to open. Re move from shells. Cut off the black end of the "neck" and cut the clams In pieces. Put In a stewpan with the butter, cloves, bay leaf, celery, onion and car rot. Cook slowly till the onion begins to brown, take out the bay leaf, stir In the flour, when blended add the tomato, then the green pepper, finely chopped. Season, cook 6 minutes, add the minced parsley and serve. Halibut Timbala With. Creamed Peas. One pound raw halibut yolk of 1 egg. 1 14 teaspoon salt, white pepper and cayenne, 1 teaspoon cornstarch, 2-8 cup milk, 1-J cup cream (whipped). Chop the halibut very fine; beat the "a aaa to it the seasoning. llend the cornstarch with a little of the milk, stir Into the remainder of the milk, then Into the egg, and stir an into tne fish. Lastly fold in the whipped cream. Butter the timbal moulds thorough ly, arrange a circle of cooked peas around the bottom and fill two-thirds run of the fish preparation. Macaroon Pudding. one pint milk, 8 eggs or 4 yolks, S taoiespoon sugar, H cup maca roon crumbs. Soak about one dozen whniA man. roona In cherry Juice for 15 minutes.
