In the portions where tho rainfall Is lightest, 20 bushels of wheat aro harvested to tho acre. U must bo admitted therefore, that our an nual rainfall Is sufficient to produce a crop on all our arid lands. Its dis tribution, however, is such, that un less It Is carefully preserved within the soil, by methods of cultivation nnd crop rotation. Its wealth producing capacity Is lost to the farmer. Peas and Vetches. But whore It Is thus saved, more cattle, sheep and hogs may be raised to the acre than was ever possible with native grasses In their greatest abundance. In many parts of the so called arid Knstern Oregon, there may be seen fine fields of peas grow ing and farmers from widely separat ed localities report that both peas and vetches do extremely well in all their gardens Why. then, Is It not possible to have, every year, Instead of idle fields, half as much acreage of the land-enriching, forage-producing crops as we have of cereals. In conversation with some cuttle raisers, when I have advocated more winter feeding, they have said by the way of excuse for not doing so, that they cannot raise hay. Our experi ment stations have repeatedly demon strated that peas and vetches sown with some cereal, produces several tons per aero of hay, so high In nu tritive value ns to offset tho necessi ty of direct grain feeding In produc ing tat cattle and sheep. And a few men, who are at present feeding eat tie on this grain hay. have reported to me that they find hogs do Just as well behind cattle so fed, as they do in toiiowlng corn-fed steers. In producing sufficient livestock for our rapidly growing market, methods like these must supply feeds with which we may supplement our range conditions. There is no doubt but we can raise as line grass cattle ns any legion In the world, but grass cattle aro always grass cattle. They make their appearance on the market from ninny sections nbout tho same time. They aro never In condition for sale during the time of greatest demand, nor can they over bring the price of fed cattle. Evon alfalfa will not make tho best market animal, if It Is the only food fed. It will make fat cat tle, but they do not stand Hhlpment nor will they dress out as well as they would If a little grain or some of this grain bearing hay were added to their ration for at least mo final stage of their preparation. Alfalfa and Wheat. I have seen some very fine cattle slaughtered these last few years that have had alfalfa hay alone. Such cat tle may be depended upon to dress from 50 to 55 per cent, off the cars, depending somewhat upon the length of time In transit. At the same time I have seen othor cattle killed that had wheat, wheat hay or barley In addition to the alfalfa. These cattle will dress from 57 to GO per cent. The per cent of dressed or carcass weight shown In cattle Is entirely de pendent upon the location of the Tat deposit. This placement of fiit which Is of so much Importance to the feed er and the butcher, occurs progres sively with tho stage of fattening In certain specially favored parts of the body, which may be named In tho following order: the tissues of tho pelvis, about the region of the kid neys, on the caul, beneath the lining membranes of tho chest and abdomen, under tho skin, first along the sides th-ni upon the rump ,loln and back, and, finally, In the connective tissues between the muscles and mtisclo fib ers. It is when fat Is deposited In thebe two latter sites, that a true slate of finish with its atendant high per cent of carcass-weight is secured and tho roast or steak shows that beautiful marbling, only attainable when thrifty management on tho part of the owner and thrifty appetite on tho part of the animal hnve caused tho lood eaten to be assimilated anil de posited as tat cells between the mus cles and finer muscle fibers. Hereford Cattle. It is this tendency inherent in the Hereford cattle, that makes them so much sought after by the retailer who caters to the fancy trade. They, how ever, are not alone In this trait, ns all the beef breeds possess it to a certain degree, and It can be accentuated lu all by Judicious management and handling In the feed pen, Tho lean animal has fat deposits only about the kidneys and between the folds of the membrane, known as tho caul During tho first stages of fattening tho deposits here are Increased and lal begins to appear along the riMes. As fattening progresses, all tlieso deposits Increase, thickening under the skin along the sides, and begin ring to spread upwards toward tho back. Dreed and individual typo are Important factor at this stage. In old oxen tho placing of fat Is confined to tho kidneys and caul. Old cows iiavu a tendency to lay up great volumes of lat in these same tissues and along the gides, and tho type of aulmul, known as the poor feeder, stores up lat only on the kidney, caul and mid die side sin faces, It Is in those tin profitable areas alto, that the great est abundance of fat is loiutil on grass cattle. It requires something more than grass and takes study of lieds and ttudy of animals to put fat on the rump and loin, and buck, ami between the muscles until nil bony prominences and all folds and ridges ore covered with a llrm, uniform coat ing, that gives the smooth appeaianee of thorough finish.
