has as a matter of fact been running
day and night for years most of tli

output, 3000 barrels per month arc
told in Portland and 1000 barrels In
Seattle. Of this 1000 barrels of Hour
at least one-half Is for the Aslnth

San Francisco ninkes a steady ile
i! mid upon tho output of this mill,
though It is not heavy. In San Dlegr
there arc two bakers who use flour
tioin this mill exclusively. Mr. Byers
told his first flour for the Oriental
trade In 1881, or in 1SS5. directly to
a Chinese merchant In San Francis
co. Since then the mill has contin
ually sent a portion of Its output
across tho Pacific. Twenty-six men
are employed In tho mill at this time,
and the number Is Increased to 3"
immediately after harvest each year
since tho new mill was built and the
capacity made whnt It now Is. Mr
Dyers built the first mill In Pendle
ton in 1S71. It was a 50-barrel affair,
and the wheat ground In it was haul
ed from Walla Walla. There was
very little wheat raised In Umatilla
county at that time. The Byers mills
now turn out, as mentioned above,
800 barrels per day and the elevator
nnd warehouses have a storage ca
pacity of 00,000 bushels. Ot this
amount the elevator will hold 75,000
bushels.
Mr. Byers' opinion and experience
with tho varieties of wheat are worth
mentioning here. He states . that
Turkey Red makes the stiougest
flour, but that the whitest product
is from Bluestem. Ho Is interested
in the introduction of the Turkey
Red wheat and last year brought in
10,000 bushels from the Horse Heav
en country. It was introduced into i
tho Horse Heaven country originally
from Kansas, where It Is the most
popular variety. Several thousand
bushels of this wheat ho sold among
the farmers of the country, by whom
it wns sown last fall ns an experi
ment. It was taken into ail parts -of
the county, so the trial will bo im
partial.
One reason for the enormous stor
age capacity of the Byers mills is to
enable the management to store great
quantities, sufficient to enable the
coast dealers with whom he deals to
sr.ve storago charges at coast points,
which aro enormous. The present
buildings, which were built following
tbe nre of four years ago, were en
tirely planned by Mr. Byers, no arch!
tect being called. The roofs of all the
storage houses, Including the largest
one, which is 100x200 fett in size, are
bridge and truss supported to save
the room that pillars and partitions
would otherwise occupy. The entire
plant Is lighted by electricity gen
erated by a plant which Is part of
the equipment. Tho first electric
light plant in Pendleton was put In
by Mr. Byers, in his mills. The now
buildings are also protected ngalnst
fire by a complete outfit of hoso and
