Experimenting upon human beings
is as a rule a risky business, but in
this case there seems no reason to
fear any serious results to the sub
jects. The foods they are to try re
such as are sold every day in the
open market, and no food whose adul
terations or sophistications are known
to be injurious will be given them.
When the results are made known the
discussion of pure food regulation will
be much clearer than it is now. More
over, the publication of the results
will itself be about as effective as a
statute. When once the public is
made aware that certain food articles
are preserved or colored with dan
gerous chemicals the demand for
those articles will cease to be suffi
cient to render their manufacture pro

refuted? It would have been ungal
lant. Besides, it was plaasant, Hob
son was the symbol of gallantry. He
was human. He liked good things.
Ha yielded his cheek. Then the
other cheek. His lips! But in that
kiss those kisses, was death to the
hero. Only poor, scorned Hobson was
left. But why? It was all Jealousy.
It is charged that this terrible failing
belongs alone to women, but it is not
bo u least it was not so in Hobson's
case. All men rose up against Hobson.
He had ..kissed, permitted women to
kiss him! .
How awful! 'Where is there a man
that would permit such a thing? So
degrading! The newspaper men were
foremost in condemning him. They
gave him the first stab and the last.
They could not bear the thought of
a man committing such a crime. A
hero may run for president, or give
away the property to his wife pre
sented by- a grateful public, and be
forgiven, but for the crime of kissing,

It was all brought about by jeal
ousy. It made every man mad who
heard about it For one man to re
ceive such attention from the fair
aex .was more than other men could
bear. As one man they rose up
against Hobson. EIb valiant services
for the country were forgotten In a
moment. They even say It was a
EChoolboy trick that any one could
Lave done. They would not have
stooped so low as to merely sink a
e'-Jp. They would have taken the
whole works. Tacy killed him as a
Lero. He is now the object of gen
eral scorn. And still these Jealous
men are not satisfied. Especially the
editors. They still Jab the hero
corpse with their poignant pens!
While the papers at the different
cities composing the Inland -Empire
Baseball league are abusing home
players, the East Oregonian Is look
ing on approvingly at the Pendleton
aggregation as It continues to bring
home scalp after scalp of the much-
be injurious to the consumer. Some
are known to be harmless. The ef
fects of others are in doubt, and in
order to avoid giving them a name
which in Itself would imply that they
are injurious it has become the cus
tom to refer to them as "sophisticat
ed foods." Concerning them there
has been a long controversy, and to
bring it to a conclusion experiments
under the direction of Dr. Wiley are
now to be undertaken at Washington.
For the purpose of giving the foods
a thorough test It is desired to try
them upon human beings as well as
upon animals. An effort is being
made to get a number of young men
to submit themselves to the tests. The
plan is to get the subject in a good
normal condition by the use of proper
food, and then give him a food con
taining one of the disputed preserva
tives, such as boric acid, for instance,
and note the effect. Every chemical
preservative or coloring material
whose effects are now disputed will
thus be put through a thorough .test,
and it will then be possible for the
government officials to report posl
tively whether its use should be per
mitted. . .a
In commenting upon the work about
to be undertaken Dr. Wiley is re
ported to have said: "Heretofore,
unfortunately, most of the investiga
tion which has been undertaken in
this direction has been at the in
stance of the manufacturer or other
interested parties, so that the natural
bias peculiar to the human mind has
had to be taken into consideration in
accepting the result Through the lib
erality of congress chemistry has for
the first time been enabled to take up
the study of this subject in a thorough
and systematic manner, and will be
enabled to supplement the Investiga
tions which have heretofore been
