3 cupfuls of cooked tomatoes
Juice and grated rind of 1 lemon
6 Mi cupfuls of sugar
1 cupful of liquid fruit pectin
Scald, peel, und crush about 2 <4
pounds of fully ripe tomatoes. Take
about 4 cupfuls of the crushed to-
mutors (or canned ones muy to
used) and boil hard, uncovered, in a
shallow saucepan tor about 10
minutes, stirring froquently to pre­
vent scorching. This is to boil down
the pulp. Now add the juice und
grated rind of the lemon, and
measure 3 cupfuls of the mixture in­
to u large kettle. Add Ihe sugar, put
over hot fire and brng Io full boil­
ing, stirring constantly; boil hard
for 2 minutes, then remove from the
fire nnd stir in the liquid pectin.
Skim, pour quickly Into hot jars or
glasses, and cover conserve at once
with hot paraffin.
If Ihe conserve is to be used witn
meats, it is nice Io add 1-8 teaspoon­
ful each of powdered allspice, cloves
nnd cinnamon to the tomatoes; a
dash of A -l sauce may be added al­
so.
