But they are more than that, for aside from their appetizing, distinctive flavor, they are easy to prepare. Simply open the can, and there are the delicately colored beans ready for u5e by themselves or in combination with other foods. Simply heating the beans in their own liquid with, perhaps, the addi tion of a little seasoning, mikes a vegetable dish of highly nutritive qualities. But the beans are more than good for one. The family likes them and clamors for morel (L Aren’t They Good! And they get more, too. Lima beans can be used for salad, and soup. They appear as a Tima roast, croquette, or timbale. They are a versatile vegetable. Here is a vegetable dish that will turn anyone into a lima bean lover: fill a baking dish with canned lima brans from which the juice has been drained. Add one tablespoon but ter, and one tablespoon brown sugar. Add half a cip of water. Place HOME POINTERS I beans and bake until the bacon is done, adding more liquid it neces- ary. Just before removing* from the oven, dot with whole marshmal lows, and toast under the broiler dame »0 a golden brown. A salad which is especially adapt ed to the luncheon is made by stuff ing tomatoes with a mixture of one cup of drained lima beans, one tablespoon of chopped green pep pers, two tablespoons chopped ripe olives, and enough mayonnaise ,0 moisten. Top with the dressing and sprinkle-the dressing with more chopped green pepper. Another delicious casserole dish is Lima Beans Fermiere. To make it, fry one small onion thinly sliced and one-half cup of finely cubed carrots in pork fat until they are browned. Put a can of drained lima beans in a casserole and add the other vegetables. Dot the top with two tablespoons of butter and add the bean liquid front the can.
