CHOICE RECIPE i. Strawiierry Fritters. Bout two eggg woll (tho whites and yolks separate ly), then mid to them a toacupful of cream ami a pinch of salt, stirring in enough flour to mako a thick batter. Now, beat tho mixture well, and when thoroughly smooth throw in a pint of utrnwborrica. Havo plonty of boiling hot fat in tho frying-pan and fry tho eamo as ordinary fritters. When dono to a golden brown color tako them out, drain them and sorvo on a napkin, with sifted sugar strewn over tho tops. HnniLED Oysters. Drain selected oystors in a colander. Dip them ono by ono into molted butter to provoni buck- ing to tho gridiron, and placo thorn ou a wiro gridiron. Uroil over a clear Uro. "Whon nicely browned on both sides ecason with sail, pepper and plenty of butter, and lay them on hot buttered toast, moistened with a littlo hot wator. Servo very hot. or they will not bo nice. Oysters cookod in this way and served on broiled bcofslcak are nico. Gravy tor Baked con or Haddock. Slico an onion and brown it in a littlo butter, then add ntcaspooufulof "Kouil Hon du Bawl's" or beef jolly, lirat dis solving it in hot water. Thickon tho mixture with a littlo Hour and sot it where it will gimmorforfifteonminutos, throwing in a littlo bunch of puraloy. Then skim and strain, soason with salt, pepper and a tablcspoonful of mush room catsup. Servo in n turoen. Cheese Cake. Tako two cups of cot tago cheese, mash woll, add threo eggs, not boaten, ono at a tinio, sugar to tasto, ono tablespoonful of Hour, a littlo nut meg, a littlo salt and milk enough to mako a littlo thicker than custard. Bako with an under crust. When ready for tho ovon sprinklo cinnamon on top. Mako it about an inch thick. Ginoeii Ssai'S. Mix ono pound of flour and Uiroo-qunrtora of a pound of white sugar. Bub into it half a pound of butter, two egg well beaten and an ounco of ginger ground fine. Beat all well together, roll out tho dough to tho third of an inch thick, cut out tho cakes and bako them. Thcso aro far superior to ordinary gingor snaps. Cream Sauce. Molt threo ounces of butter; add Hour to thicken with half a pint of cream ; season with pepper and salt; let it loil and servo with chicken, veal or sweetbreads. Begin to ropcat at second row. Hints for Housekeepers Put camphor ou cold-sores whou they first come, and that may heal thorn or provont thorn from dovoloping. Finger marks may bo romoved from varnished furniture by tho uso of a lit tlo sweet oil upon a soft cloth. To clean nickel on stove, use hoda wet in ammonia. Apply with an old toothbrush, and rub with a woolen cloth. It is said that a pint of milk taken every night just boforo retiring to rest will soon mako tho thinnest'tlgitro grow plump. It has bcou proven that eggs can bo kept fresh for two or threo month by simply packing in Bait, or in dry, sifted coal ahos. Stains from ted or coffee will comoout at onco if thoy bo taken immediatoly and hold ovor a pail while boiling water is turned over them. Never let tho feet become cold and damp, or sit with tho back toward the window, as thoso things tend to aggra vate any existing hardness of hearing. Put tea and coffee away in air-tight receptacles as boon as thoy are brought to tho house. They loso much of their flavor by standing uncovered. Vegetables with a strong flavor, such as onions and turnips, will be much improved by putting them to boil in cold water, renewing this from a kettlo of boiling water as boon as it comes to a tculd. Poisonous wounds made by spiders, centipedes and scorpions aro treated in tho same way as those made by iusects, that is, by the direct application of harts horn to the wound, and, when neces sary, internal stimulants. If a new broom bo immersed in boil ing water until quito cold, nnd then thor oughly dried in the air, it will be far more pleavant to ut-e and will last much longer. When a homo is kopt in tho propor way, every ono of lho family is mado comforlnblo, and so very much depends on tho ono who directs tho house. Ella is right in watching thn flowers grow, for thoy help to beautify home. "Francis" complains of thcso Chincso pheasants. Wo should liko to get ono good look at tho beautiful birds, and if it were our wheat Holds, wo would bo glad to givo them a good food every day to enjoy tho sight of their gorgeous plumago; but then, that is hardly a business view to tako; it is said that thoy do throw down a deal of young wheat. Wo enjoy listening to tho "Boh Whites" 8otuo of which wore brought to Marion county nnd turned looso, though it seems as though thoy had not multi plied as ono might oxpect, for it is raro to hour one, though it is many years sinco tho sweet strangor cimo to us. Thoy aro plentiful in Ohio, and wo usod to liko to sit in tho cool evening and answer their caljs, "Bob White j Bob Whtto." So, Francis, you must not com plain too much, for if there is too much said there will bo annihilation for thceo birds with tho gay feathors. So Doni doos not liko to milk. It tie lcndd on whether things are convi niont about tho cow-yard. If it Is rainy it is not a comforlnblo duty to do, especially if there is no clean, dry shod. But when tho cow is goutlo wo liko to tnke care of hor, and liko to smoll her sweet breath. There is so much comfort to lie hnd in living where thoro is plonty of milk and cream to use when cooking. The Chi iieeo havo cows, but uso them only in plowing and their work; thoy do' not use milk, nor do they uso butter. Dora docs not like to milk, but then she mud mako herself think she does like to do it, for then tho link is easier. A cow will not give down half her milk if one is haridi with her. There nro lots of Chinese pheasants here. Ono old malo flew up within twonty feet of mo tho other day. 1 do not know what wo will do with them if tho law protects them a fow years longor. It has been very windy horo this spring. Wo have a nice flower gar den. 1 like to have a flower garden. I think that flowers are pretty. When the rose butlies bloom I think they ait; pretty. I don't think that anything is prettier than flowers. I will tell you what I do to help mamma : I sweep the house, help tend to tho chickons, help wash tho dishes and help cook.
